Pantry staples
Pantry staples to have on hand to make soup-making easy:
- chicken or beef broth
- canned coconut milk
- diced tomatoes
- fire-roasted diced tomatoes
- beans, red, black, great northern, pinto
- canned corn
- gluten-free pasta
- chili powder
- garlic powder
- onion powder
If you have time or beef or chicken is on sale, you can cook ground beef and chicken and freeze it in 1 lb or 2 cup portions to have ready for adding to soups. Shred the chicken before freezing.
Storing and freezing soups
Store soup in a covered container in the refrigerator for up to 5 days.
Before freezing, make sure the soup has completely cooled. You can freeze soups in zip-locked freezer bags in large or small amounts. That way, you’ll have soups ready for family meals or single servings. Make sure to remove as much air as possible from the freezer bags and lay them flat in the freezer to freeze to save space. And, make sure to label the bags with the contents and the date of freezing.
If freezing in a glass container, make sure to leave a couple of inches of air between the soup and the top of the container. It’s best to use straight jars so that, as it freezes, it has plenty of room to expand.
To thaw, place the frozen containers in the refrigerator and let them thaw overnight. I suggest that you place frozen freezer bags in a bowl or a shallow pan, in case there is any leaking as it thaws.
If you don’t have time to thaw the soup before reheating, place the frozen soup in a pan with a little water and heat it up slowly over medium heat. This can be done if it was frozen in a zip-lock bag, and you can cut the bag off the frozen soup.
