If you have company over and you have friends and family that can have dairy or no dairy, this is an easy soup to serve. Then, offer different types of toppings that your guests can have or maybe have them add to the dinner by bringing their favorite toppings.

Instructions for making taco soup
- Brown the ground beef in a Dutch oven or large pot, breaking it up as it cooks.
- Add the diced onions to the meat and cook for 5 minutes, stirring frequently.
- Next, stir in the seasonings.
- Then, add the fire-roasted tomatoes, drained beans, drained corn, green chiles, and broth.
- Bring to a boil for 5 minutes, then reduce the heat, allow to simmer for 10 minutes, and then serve.
It can be served with these optional toppings:
- avocado
- cheese, dairy-free cheese (Violife or Daiya)
- sour cream, dairy-free sour cream (Kite-Hill or Forager)
- sliced green onions
- lime juice
- cilantro
- jalapeno slices
- tortilla chips

Ingredients
- 1 lb ground beef
- ½ of a medium yellow onion, diced
- 2 teaspoons chili powder
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 2 14 oz. cans diced fire-roasted tomatoes
- 1 14 oz. can pinto beans
- 1 14 oz can black beans
- 1 14 oz can corn
- 4 oz can diced green chilis
- 3 cups chicken broth or beef broth, gluten-free
*Make sure all canned ingredients are gluten-free!

Notes
Topping suggestions: avocado, jalapeno slices, cheese and dairy-free cheese, sour cream and dairy-free sour cream, tortilla chips, cilantro, lime juice, and green onions.
It can also be cooked in a slow cooker. Follow steps 1 and 2, then add everything to the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
