This gluten-free tomato soup recipe is perfect for those times when a cozy bowl of soup is just what you need and you need to make it quickly. Simple ingredients that you can keep on hand make this an easy-go-to recipe. And it’s dairy-free tomato soup.
Tomato soup has always been one of my favorite comfort soups. And I love that this tastes so good that I don’t miss that condensed tomato soup version from my childhood at all.
How To Make Gluten-Free Tomato Soup:
The ingredients you’ll need to have are simple and easy to keep on hand.
- fire-roasted diced tomatoes, gluten-free (I use Hunt’s)
- almond milk
- sugar
- paprika
- garlic powder
- salt & pepper
- pinch of cayenne
Place all ingredients in a blender.
Blend for 30-60 seconds or until all the tomatoes are pureed.
Pour puree into a medium-sized saucepan and bring to a boil over medium heat, stirring frequently. Turn heat down to low and simmer for 5 minutes, continue to stir frequently.
- Alternatively, if you have an immersion blender place ingredients directly into the saucepan and blend until the tomatoes are pureed. Then continue with the heating instructions.
Serve on its own or with gluten-free croutons or gluten-free crackers. My recipe for gluten-free croutons is easy to make and can be cooked while you make the soup.
