Easy & Creamy Hamburger Soup (Gluten-Free & Dairy-Free)

A bowl of creamy hamburger soup that's gluten-free and dairy-free. When you’re needing a simple and comforting weeknight dinner this creamy hamburger soup is the answer. With common ingredients that you keep on hand, this soup makes it easy to have dinner on the table without much fuss. It’s gluten-free and dairy-free. I’ve included directions to make it in an Instant Pot, slow cooker, or stovetop.

Simple Ingredients for Creamy Hamburger Soup:

  • lean ground beef
  • olive oil
  • one medium onion
  • three potatoes
  • 1 can of Petite Diced Tomatoes (I used Red Gold – it’s labeled gluten-free)
  • 1 can of cream style sweet corn (Walmart brand – and again it’s labeled gluten-free)
  • 1 can of coconut milk (whisk the cream and water parts together)
  • salt & pepper
  • Optional add-ins:
    2 tablespoons nutritional yeast
    1/4 teaspoon Herbamare Season Salt
    2 tablespoon liquid from Mt. Olives Simply Vidalia pickled onions

These ingredients are all pretty common ingredients to have on hand. The tomatoes, creamed corn, and coconut milk are easy to keep in your cupboard so you could put this together quickly.

Meal Prep Tip: To make this even quicker is to have the hamburger already cooked. I like to brown up several pounds of ground beef with onions at a time and portion them out into freezer bags so all I have to do is grab a bag from the freezer and add it to the pot.

How to Make Creamy Hamburger Soup in an Instant Pot:

Ground beef browning in an Instant Pot.Select the saute setting and heat the 2 tablespoons of olive or avocado oil for a minute or two and then add the pound of lean ground beef and chop it while it browns with a large spatula or wooden spoon.

Ground beef and onions in an Instant Pot.Add in the chopped onions and cook for 3-5 minutes until the onions just start to look translucent.

Potatoes, ground beef and onions in an Instant Pot for a Creamy Potato Soup.Add the three peeled and diced potatoes and one and a half cups of water. Secure the lid on the pot and select the manual setting and set for 6 minutes. When the cooking time is done do a quick release and press stop.

Creamy hamburger soup made gluten-free and dairy-free. Press the saute button again and cook for 8-10 minutes stirring frequently. Season with additional salt and pepper if desired.

To make in a slow-cooker:

In a large skillet heat the oil and then add the lean ground beef and onions in a skillet. Cook until browned, chopping frequently. Add the beef and onions to the slow cooker with the potatoes, tomatoes, creamed corn, water, salt, pepper, and any optional add-ins. Cook on low for 8-10 hours. The last 20 minutes of cooking add in the whisked coconut milk.

Cook on the stovetop:

In a Dutch oven or large pot heat the oil and fry the lean ground beef and onions until browned. Add in the potatoes and water. Heat over medium-high heat for 15-20 minutes until the potatoes are tender. Add in the creamed corn, tomatoes, salt, pepper, whisked coconut milk, and any optional add-ins. Simmer for 10 minutes or until thoroughly heated through.

Description

This creamy hamburger soup is perfect for a simple weeknight dinner. With directions for Instant Pot, slow cooker, or stovetop.


Ingredients

1 lb. lean ground beef
2 tablespoons olive oil

Notes

*make sure the canned foods are labeled gluten-free. I used Red Gold tomatoes, Walmart Brand creamed corn, and Thai Kitchen’s coconut milk. All are labeld gluten-free.

    Can we use beef broth vs water to add more flavor? I have 2 cups left over from another recipe so thought it might add flavor.

      Yes, definitely. I purposely used water to make it a super easy meal with as few ingredients as possible. So if you have broth on hand that would be great.

      Canned cream style sweet corn doesn’t contain dairy.

    If you don’t have any creamed corn, can you sub it out for just regular frozen corn? Would you need to add any additional liquid?

      You can substitute the creamed corn with the frozen corn however, the texture of the corn will be different in the soup. You could thaw the corn and mash it a little before adding it to the soup so the corn will be creamier.

    We love this easy soup! It does taste a little like coconut milk but we don’t mind. We add in canned corn, paprika, and garlic powder. Turns out great in my Crockpot Pressure Cooker!

    Creamy and satisfying without dairy and gluten!! Perfect flavor-texture combination. I used organic ground beef, subbed frozen corn for creamed (because I didn’t have any on hand) and added a dash of optional, but suggested nutritional yeast and olive juice. Great recipe!
