Preheat oven to 450°. Prepare a baking pan with just a light spritz of oil.
Cut each sausage at an angle into 5 sections. I used Al Fresco Sweet Apple Chicken Sausages (gluten-free).
Peel and slice potatoes. Cut green pepper into long strips. Cut the onion in half and then into thick slices. Skin two garlic cloves.
Place all ingredients on the prepared baking pan. Spray ingredients with avocado oil and toss or toss with melted coconut oil—season with salt, pepper, and seasoning salt. My favorite seasoning salt is Herbamare.

Bake in the oven for a total of 35 minutes, turning ingredients halfway through. After 35 minutes remove from oven and smash the garlic cloves and spread them around. Serve.
