Instructions
- In a 12-inch skillet, brown the ground beef. Drain off any excess grease.
- Add crushed garlic, Dijon mustard, and Worcestershire sauce to the beef. Add parsley, paprika, onion powder, black pepper, salt, and chili powder.
- Stir in beef broth and coconut milk and bring to a boil. Add gluten-free noodles, cook for 5 minutes, and reduce heat to medium-low.
- Mix cornstarch with cold water until dissolved. Stir into the stroganoff and stir occasionally for 5-10 minutes as it thickens.
- Optional: Brown 8 oz. of sliced mushrooms with the ground beef.

- 4 cups beef or chicken broth (gluten-free)
- 1 13.6 oz can coconut milk, whisked
- 8 oz gluten-free rotini pasta (or your favorite pasta)
- 2 tablespoons cornstarch
- ¼ cup cold water
- parsley for garnishing (dry or fresh)

My husband doesn’t usually like coconut anything but he couldn’t tell it had coconut milk! This is always a hit with my 18 mon. and 3 yr old!
Tried it with chicken broth and definitely don’t like it as much as when I used Beef broth.

You could use almond or cashew milk.

We subbed the Coconut with Chobani creamy Oat milk (coconut allergy). Also used chicken broth instead bc that’s all we had on hand. Turned out amazing!

I feel silly for asking this, but the coconut milk… Usually I put it in the fridge to form the cream at the top. Is that what you do, and then whisk it? I’d like to make this tonight if possible, but don’t want to mess it up.

Lea & Perrins is the brand of Worcestershire sauce that I use. You could also use a gluten-free soy sauce, like Kikkoman Gluten-free soy sauce or San J Tamari sauce.

I haven’t tried it myself so I can’t say for sure. But sometimes coconut flavor in coconut milk can be hidden by the other ingredients, so it may work with coconut cream too.
