These yummy gluten-free apple oatmeal bars are great for breakfast or dessert. With their delicious crumb topping and tender apple center, you’ll find yourself making these over and over.

Ingredients
- Gluten-Free Flour: My favorite gluten-free & dairy-free flour blends to use are Pamela’s Gluten-Free 1:1 All-Purpose Flour and Better Batter. I’ve been using them both with great results. They are both a 1-1 substitute. If you use another gluten-free flour blend, be sure that it contains xanthan gum. If not, add 1/2 teaspoon of xanthan gum per cup of flour.
- Dairy-Free Butter: Suggested brands are Country Crock Plant Based with Avocado Oil, Smart Balance, or Earth Balance.
- Gluten-Free Oats – Make sure to use gluten-free oats. I’ve seen Bob’s Red Mill gluten-free oats in my local grocery store but only the old-fashioned rolled oats. What we need for this recipe are the quick oats. So if you can only get the old-fashioned kind then a quick run through a food processor will turn them into quick oats. I’ll show pictures of that below.
- Almond or Cashew Milk
- Brown sugar, two apples, sugar, lemon juice, baking soda, cinnamon, and cloves.
Always check your labels to make sure that you’re purchasing gluten-free products.
Instructions

If you don’t have quick oats, you can make them from old-fashioned oats by pulsing them in a food processor. You need 1 cup of quick oats for this recipe, so put in 1 ½ cups of old-fashioned rolled oats and pulse them 4-5 times to break them up. (This picture is from when I was making No Bake Cookies, so it looks like more than 1 ½ cups of oats.)

This is after they’ve been pulsed 4-5 times, and it should measure out to 1 cup.

Peel and chop two apples and place them in a pot with sugar, water, lemon juice, cinnamon, and cloves. Bring to a boil, lower the heat, and simmer for about 10 minutes or until the apples are tender. Stirring occasionally.

Mix the dry ingredients and then cut in the cold buttery spread. You can cut in the butter with a pastry cutter or two forks. Or use a food processor and pulse the ingredients until you have a crumbly mixture.

Take one cup of the crumb mixture and set aside. Press the remaining mixture into the bottom of a 9×9-inch baking dish.

Spread the apple filling mixture over the crust and then crumble the remaining crumb mixture evenly over the top.

Bake at 350° for 35 minutes. Remove after baking and place the pan on a wire rack to cool. Then cut into bars.
Storage
The bars can be stored on the counter for 2-3 days or refrigerated for up to 4-5 days.

Can I freeze?

Yes, these will freeze well. If you want to you can cut them into serving sizes and then place them on a cookie sheet and freeze for an hour or two. Once frozen place them in a freezer bag or container.

How do you tell when they are done? Are they supposed to be golden brown?

Yes, bake them right around 35 minutes and they should be golden brown. Oven temps can vary so if you may need to add or subtract a couple of minutes. I hope you enjoy them!

Can you use apple pie filling?

I haven’t tried making it with that but I think it would. You might cut up the apples a bit so there are smaller bites, but it’s just a preference.
