    Homemade Marshmallows (No Corn Syrup)

    These homemade marshmallows are light and fluffy and taste incredible. They’re also made with healthy ingredients that you can feel good about. This recipe does not use corn syrup, artificial flavors, or dyes.

    These marshmallows are so delicious in hot cocoa and perfect for making s’mores or snacking. You’ll be hooked once you make your own and see how easy they are to make. Be sure to try these with my Dairy-Free Hot Chocolate Mix.

    How to make homemade marshmallows

    Line an 8×8″ or 9×9″ square pan with parchment paper. Cut the corners of the parchment paper to allow it to lay correctly. Sprinkle it lightly with powdered sugar.

    To make these marshmallows, you’ll need just a few ingredients: unflavored beef gelatin, maple syrup, water, and salt. And then a dusting of powdered sugar.

    Place water in the bowl of a stand mixer, then sprinkle the beef gelatin over the water and let stand.

    Put the maple syrup and pinch of sea salt into a 3-quart saucepan and heat over medium-high heat to 235°F using a candy thermometer. Don’t stir. Keep an eye on it as it heats to ensure it doesn’t boil over.

    Then, pour the maple syrup into the gelatin mixture and mix it on high for 10-12 minutes or until it has thickened.

    Spread the marshmallow mixture into the prepared pan with an offset knife dipped in water. Sprinkle with sprinkle with powdered sugar.

    Allow to set for 4-6 hours before cutting. Cut into squares and coat the sides with more powdered sugar. You can cut them large or even really small. It’s all up to you.

    Store the marshmallows in an airtight container for up to 2 weeks.

    Items needed

    Unflavored Beef Gelatin – Once you have this gelatin, you can make marshmallows or gummies anytime.

    A candy thermometer – I’ve had the candy thermometer I use for years. You can get one locally or on Amazon. There is a variety to choose from.

    Heavy-duty 3.5-quart saucepan -This pan is new to me because I needed a pan this size to make my homemade marshmallows. It has turned out to be one of my favorites. It’s so easy to make pasta or rice in it, too.

    Stand Mixer – I have this type of stand mixer, which has been a workhorse for me for nearly 30 years.

    Square pan – An 8×8″ or 9″x9″ square pan works great for this recipe. The pans linked are the ones that I have, but any brand will work since there is no baking involved.

    Ingredients

    • ⅓ cup water
    • 1 tablespoon unflavored beef gelatin
    • pinch of salt
    • ½ cup powdered sugar

    Store in an air-tight container for up to 2 weeks. 


    Notes

    You can use honey in this recipe in place of the maple syrup. I think the maple syrup marshmallows taste best though.
