  4. Mix wet ingredients together and then add to the crumbly mixture and mix until combined.

How To Easily Roll Out Graham Cracker Dough

Steps to roll out the dough for making gluten-free graham crackersThe dough should be nice and soft to work with. We’re going to make it all super easy to roll out by using two pieces of parchment paper.

  1. Cut a piece of parchment paper to fit the bottom of your 12″ x 18″ baking pan. Tear off a second piece of parchment paper that is a little larger that will be used later to place over the top of the dough.
  2. Now place dough on top of the 12″ x 18″ piece of parchment paper and use your hands to roughly press the dough out towards all four edges.
  3. Then place the larger piece of parchment paper over the dough. Using a rolling pin, evenly roll out the dough to cover the bottom piece of parchment paper.
  4. Remove the top piece of parchment paper and take a butter knife to trim off the dough to just inside the bottom piece of paper.
  5. Once it’s been trimmed, use a pizza cutter to cut the crackers the size you would like. Then prick each cracker several times with a fork. (if you don’t want to use a pizza cutter on your countertop you can put it in the baking pan first.)
  6. Place the baking pan next to the prepared dough. Gently pick the parchment paper with the dough on it up and place in the pan. Then bake according to the directions.

Notes

  • I use Better Batter Gluten-Free Flour in this recipe. You can use another one-to-one gluten-free flour mix if you prefer but be sure it contains xanthan gum. If it doesn’t add 1 teaspoon xanthan gum to the recipe.

Mine kept for a few days any longer than I would suggest freezing them and just pulling out a few when you want them.

I did this recipe step by step and they turned out super soft, and kind of grainy. Do you know why

Hi Kendall, I’m sorry you these didn’t turn out the way you had hoped. These are not crispy-hard crackers like you would buy at the store. As far as being grainy I wouldn’t know exactly why. I haven’t had that experience with them. Did you use Better Batter gluten-free flour?

I’ve really had the best success with Better Batter Gluten-Free Flour. My family has been gluten-free for 9 1/2 years and I’ve tried a lot of different flours and my all-time favorite is Better Batter. I don’t even try any others anymore. I’m sorry it didn’t turn out like you wanted it to.

My daughter has been wanting some graham crackers , she hadn’t had any since we found out she is gluten intolerant. I found this recipe and decided to try it and they were very good. She loved them! I used King Arthur’s gluten free flour and they tasted very similar to another recipe I used to make, that was made with regular flour.

I’m so glad she loved them! And it’s good to hear that King Arthur’s flour worked well too.
