    Ground Beef and Bell Pepper Rice Bowls (Gluten-Free)

    This ground beef and bell pepper rice bowl is a tasty dinner that can be made in 30 minutes or less. If you’re like me, a flavorful and easy-to-make dinner is the perfect meal.

    During this past summer and after a big move, I have been making this meal on repeat. It’s quick and so satisfying, and everyone in my family loves it. It’s also a great dinner for meal prepping since it reheats so easily. For another easy meal, be sure to try my Gluten-Free Skillet Enchiladas.

    Ingredients

    2 lbs ground beef
    3 bell peppers, various colors
    large onion
    long-grain white rice or cauliflower rice
    coconut aminos or gluten-free soy sauce
    gluten-free sriracha sauce
    honey
    red pepper flakes
    green onions
    salt & pepper
    garlic powder

    Instructions

    Cut pepper and onion for bell peppers and beef rice bowls.

    Cut bell peppers into strips. Heat oil in a large skillet over medium heat, and then add the bell pepper strips, stirring occasionally.

    While the peppers cook, place the rice in a metal strainer and rinse under cold water for a couple of minutes to remove any excess starch. Then, add the rinsed rice to an Instant Pot* and 2 cups water. Close the lid, and set the venting knob to seal. Use the manual mode and set it for 3 minutes. Allow for natural release for 10 minutes, and then remove the lid – fluff with a fork.  

    *If you don’t have an Instant Pot, you can cook the rice on the stove or in a rice cooker. Follow the directions on the rice package.

    After the bell peppers have softened (10-13 minutes), remove them to a serving dish.

    Next, add the ground beef to the skillet and cook until browned, breaking up the meat as it cooks—season with 1 tablespoon of the gluten-free soy sauce, salt, black pepper, and garlic powder. 

    Dice the onion and add it to the ground beef as it browns. Continue cooking the meat until it’s browned, and the onions are softened. 

    Sauce: Mix the remaining gluten-free soy sauce, sriracha sauce, honey, and red pepper flakes. Set aside.

    Slice the green onions. Set aside.

    To serve, make individual bowls with ground beef, bell peppers, and rice. Drizzle with sauce and sprinkle with sliced green onions and red pepper flakes. 

    Store

    Any leftovers can be stored in a covered dish in the fridge for up to 4 days. The ingredients can be stored separately or together.

    • 2 cups long-grain white rice or cauliflower rice
    • 2 lbs ground beef

    • 2 tablespoons gluten-free sriracha sauce
    • 1 tablespoon honey
    • ¼ – ½ teaspoon red pepper flakes
    • 2 bunches of green onions
    • 1 teaspoon sea salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder

      So so good! Such a great comfort and easy to throw together (especially if you use frozen bell peppers that are already sliced)!
