Description
This ground beef and bell peppers rice bowl is a tasty dinner that can be made in 30 minutes or less.

- 3 bell peppers, various colors
- 2 tablespoons olive oil or coconut oil
- 2 cups long-grain white rice or cauliflower rice
- 2 lbs ground beef
- large onion
- 4 tablespoons gluten-free soy sauce or coconut aminos, divided
- 2 tablespoons gluten-free sriracha sauce
- 1 tablespoon honey
- ¼ – ½ teaspoon red pepper flakes
- 2 bunches of green onions
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Cut bell peppers into strips. Heat oil in a large skillet over medium heat, and then add the bell pepper strips, stirring occasionally.
- While the peppers cook, place the rice in a metal strainer and rinse under cold water for a couple of minutes to remove any excess starch. Then, add the rinsed rice to an Instant Pot* and 2 cups water. Close the lid, and set the venting knob to seal. Use the manual mode and set it for 3 minutes. Allow for natural release for 10 minutes, and then remove the lid – fluff with a fork.
- After the bell peppers have softened (10-13 minutes), remove them to a serving dish.
- Next, add the ground beef to the skillet and cook until browned, breaking up the meat as it cooks—season with 1 tablespoon of the gluten-free soy sauce, salt, black pepper, and garlic powder.
- Dice the onion and add it to the ground beef as it browns. Continue cooking the meat until it’s browned, and the onions are softened.
- Sauce: Mix the remaining gluten-free soy sauce, sriracha sauce, honey, and red pepper flakes. Set aside.
- Slice the green onions. Set aside.
- To serve: make individual bowls with ground beef, bell peppers, and rice. Drizzle with sauce and sprinkle with sliced green onions and red pepper flakes.
Notes
*If you don’t have an Instant Pot, you can cook the rice on the stove or in a rice cooker. Follow the directions on the rice package.
