This gluten-free turkey sausage is the perfect mix of sweet and savory. Maple syrup adds just the right amount of sweetness, sage and fennel add the warm, classic sausage taste, and red pepper flakes give a gentle kick. It turns out moist, tender, and deliciously hearty.

Instructions

Mix all ingredients in a stand mixer or a large mixing bowl.

The sausage mixture is very sticky, so you will want to have a bowl of water to be able to dip your scoop in and to wet the palm of your hands.
To make the patties, use a spring-loaded scoop and dip it and your hands in water. Then scoop out around 2 tablespoons of the mixture and use your hands to shape it into a patty. Place all the patties on a plate.

Next, heat a large skillet with 2 tablespoons of olive or avocado oil over medium heat. Once heated, place half of the patties in the skillet with room between them. Fry for 3 minutes on each side. Use a meat thermometer, if you have one, to check that the internal temperature is 165°F.
Add 2 more tablespoons of oil and repeat frying the rest of the patties.
Storing
Store turkey sausage patties in a covered container in the refrigerator for up to 5 days. To freeze, place cooled patties in a freezer container or freezer zip-locked bag, removing as much air as possible. Can be frozen for up to 3 months. To thaw, place it in the refrigerator overnight. Reheat in a skillet on the stove or in an air-fryer.
