    Easy Sausage Breakfast Skillet (Gluten-Free)

    Here’s a hearty breakfast that’s sure to please. This easy sausage breakfast skillet recipe is perfect for family or guests. And it can be a super easy meal to add to your dinner menus when you want breakfast for dinner. It’s also perfect to make ahead for a quick breakfast throughout the week. You can also use my Homemade Turkey Sausage if you prefer turkey sausage.

    Spinach, peppers, sausage, and eggs all cooked together for an easy breakfast in a skillet..

    How to Make Sausage Breakfast Skillet:

    Ingredients for a delicious breakfast -- spinach, peppers, onion, sausage, and eggs.

    First, prepare the veggies by dicing them and then tearing the spinach into smaller pieces. Next, lightly beat the eggs and set aside.

    Steps to make a sausage breakfast skillet - brown sausage, add chopped pepper and onions, and fry.

    Then in a large skillet over medium heat brown the sausage, breaking it up into small pieces while it cooks. When it’s almost completely browned add the peppers and onion to the skillet and stir around while they begin to cook.

    When the onions are translucent, add the spinach and cook until it starts to wilt, and then stir in the lightly beaten eggs and season with salt and pepper. Stir until the eggs have cooked. Remove from heat and serve.

    Stir until eggs have cooked. Remove from heat and serve. And for some extra yum drizzle a little maple syrup over each serving.

    1 lb. gluten-free pork or turkey sausage
    3 large handfuls of baby spinach, torn in smaller pieces
    6 small sweet peppers, diced
    1/2 of a medium onion, diced
    8 eggs, lightly beaten
    salt
    pepper

    Notes

    *This can last all week in the fridge for an easy make-ahead breakfast.
