Description
Homemade turkey sausage patties with maple syrup, sage, fennel, and red pepper flakes make these tender, moist, and deliciously hearty.
Ingredients

- 1 lb ground turkey, 90-93% lean
- ½ cup applesauce, unsweetened
- 1 tablespoon maple syrup
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon ground sage
- 1 teaspoon sea salt
- ½ teaspoon ground ginger
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes
- ½ teaspoon fennel seeds
For frying
- 4 tablespoons olive oil or avocado oil (divided)
Instructions
- Mix all ingredients in a stand mixer or a large mixing bowl.
- The sausage mixture is very sticky, so it helps to have a bowl of water nearby to dip your scoop in and to wet your hands.
- To make the patties, use a spring-loaded scoop and dip it and your hands in water. Then scoop out around 2 tablespoons of the mixture and use your hands to shape it into a patty. Place all the patties on a plate.
- Heat a large skillet over medium heat and add 2 tablespoons of olive or avocado oil. Once heated, place half of the patties in the skillet with room between them. Fry for 3 minutes on each side until nicely browned. If you have a meat thermometer, check to make sure the internal temperature is 165°F before removing them from the heat.
- Add 2 more tablespoons of oil and repeat frying the rest of the patties.
Notes
Store turkey sausage patties in a covered container in the refrigerator for up to 5 days.
To freeze, place cooled patties in a freezer container or freezer zip-locked bag, removing as much air as possible. Can be frozen for up to 3 months. To thaw, place it in the refrigerator overnight. Reheat in a skillet on the stove or in an air-fryer.
