    How To Make Gluten-Free Peach Cobbler

    This gluten-free peach cobbler is easy to make and tastes incredible. It’s a perfect dessert for holidays, cookouts, family dinners, or parties.

    This cobbler can be made with fresh, frozen, or canned peaches – all three work well in this recipe. When the peaches are fresh in the summertime, go ahead and make it fresh. The fresh taste of peaches is amazing! But don’t worry; the frozen and canned peaches are delicious, too.

    Ingredients notes

    Gluten-Free Flour: My favorite gluten-free & dairy-free flour blends to use are Better Batter and Pamela’s Artisan Blend. I’ve been using them both with excellent results. They are both one-to-one substitutes. If you use a different gluten-free flour blend, be sure it contains xanthan gum. If not, add 1/2 teaspoon of xanthan gum per cup of flour.

    Dairy-Free Butter: Suggested brands include Country Crock Plant-Based with Avocado Oil, Smart Balance, or Earth Balance.

    Instructions

    Cooking peaches to put in a gluten-free peach cobbler recipe.
    • Place peaches, 3/4 cup sugar, and cornstarch together in a medium pot. Cook over medium-low heat, stirring frequently. Continue with the rest of the recipe while the peaches are cooking just keep an eye on them and stir frequently.
    • Stir almond milk and apple cider vinegar together in a cup and let sit.

    • Place buttery spread in a 9 x 13″ casserole dish. Turn oven on to 350°. Put the casserole dish in the oven to let the butter melt. The buttery spread will take about 5-6 minutes to melt.
    • In a medium bowl, mix the flour, sugar, baking powder, and salt together.  Stir in the milk mixture.
    • Remove the casserole dish from the oven and pour the batter mixture over the melted buttery spread. Don’t stir, but you can lightly spread the batter out if needed.  Spoon peach mixture evenly over the batter mixture. Again, don’t stir.

    • Bake for 50-55 minutes until golden brown.
    • It’s good if it is served warm, at room temperature, or cold.

    How to peel a peach:

    To quickly peel a peach, submerge it in boiling water for 30 seconds, remove it, and put it in ice water. Let them stay in the ice water for a few minutes to cool off enough to handle. You may need to use a paring knife to start with, but the peeling will come right off.

    If you don’t want to mess with the boiling water, peel them with a paring knife. It’ll take a little more effort to peel, but it’s still not hard.

    Also, if you don’t want to peel your peaches, you don’t have to. The pealing will get soft while the cobbler is baking and still taste great.

    How to serve and store

    Serve peach cobbler warm, room temperature, or cold. It’s delicious all three ways. It can be left out on the counter covered for a couple of days, but any longer than that, you should put it in the refrigerator. (If it has even lasted that long.)

    Description

    This easy-to-make gluten-free peach cobbler is perfect to serve to family or guests. It’s delicious comfort food.


    Ingredients

    Scale
    • 4 cups peaches – fresh, frozen, or canned (see below for amounts of each)
    • 3/4 cup sugar
    • 1 tablespoon cornstarch

    Fresh peaches – 5 peaches should give you 4 cups
    Frozen peaches – About 6 cups of frozen peaches thawed and drained should give you 4 cups.
    Canned peaches – Use 3 15oz cans of sliced peaches in juice only. Drain. Be sure it’s gluten-free.

    • Batter
    • 3/4 cup almond or cashew milk
    • 1 tablespoon apple cider vinegar
    • 1/2 cup dairy-free butter*
    • 1 cup gluten-free flour mix**
    • 1 cup sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt


    Instructions

          You can use tapioca starch or arrowroot starch.

      What other gluten free flour can I use if I don’t have that on hand?

        So my favorite gluten-free flour blend is Better Batter, but if you don’t have that then I think Pamela’s Artisan Blend or Pillsbury Gluten-Free blend would be good choices. They are both dairy-free as well. But if you have a favorite blend already then go with that one.

          Mixing it with the almond milk is creating mock buttermilk. If you don’t have any it can be left out.

      I made this last night for company. Wow! It was amazing. There was none left. People went back for seconds. You have such a complete understanding of how GF flour works. EVERY one of your recipes that I have tried has turned out fantastic. Thank you so much. People don’t even know what they are eating is gluten free. My daughter says thank you too.         This would be best baked immediately after mixing. You can reheat it by covering it in foil and baking it at 350° for 20 minutes.

      Yum! This is really good. I used Bob’s Red Mill gf flour (my fave), arrowroot powder (what I had), real butter (I can tolerate it over other dairy), 1/4 cup less sugar, and it was perfect. Now to stop myself from eating the whole pan. This is a keeper!

      I think the author should double check her instructions as it didn’t make sense to mix the dry ingredients with the fresh peaches in the saucepan. There was no moisture to cook it. I then had to pour it into a bowl & microwave it. I then poured the peach mixture into the pan (after I poured the melted butter out). I then drizzled all the butter on top of the peach mixture to make sure it would turn out right. Luckily it did and it was very good!!

      I tried making this recipe just now and (with following the recipe) the batter came out really runny to the point that I couldn’t put it into the pan without it mixing in with the butter mix and the peaches just sank into it as well. Any idea what could fix this next go around?

          Yes, I continued to bake it and it did come out pretty soft and not so crumbly. But overall it still tasted good!

      I made this with coconut milk and it tasted pretty good; I will try it next time with almond milk. I added vanilla also. Was very good
