- 1 tablespoon coconut oil
- 2 chicken breasts, cubed
- 2 10 oz. bags of frozen diced sweet potatoes
- 1 10 oz. bag of frozen spinach
- 1 cup of frozen diced green pepper
- ยฝ cup chopped onion
- 1 15 oz can of kidney beans, drained
- ยฝ teaspoon ground chipotle chili
- ยฝ teaspoon garlic powder
- ยฝ teaspoon onion powder
- mineral salt and pepper to taste
Instructions
- Heat coconut oil in a large skillet over medium heat until melted. Add cubed chicken and stir fry for a couple of minutes. Add in other ingredients. Stir and cover. Stir occasionally. Cook for 20-25 minutes until sweet potatoes are tender.

What would it do to cooking times if I had fresh not frozen sweet potatoes? And I have no onions….just onion powder. Also, the cubed chicken, is it raw or cooked?

I’m glad you liked it and your substitutions sound good. Yes, I used raw chicken and if you use fresh sweet potatoes it might take just a bit more time, but it seems like sweet potatoes cook pretty quickly.

This is soooo good. Yum. I just made a version of it with what I have on hand: replaced beans with black beans, onion powder, no onions and I did curry powder…no chilli powder and a little cayenne pepper. I also threw in some frozen riced cauliflower and ate it with cottage cheese. Made it a crossover, but wirth it! Sooo good. Thank you for the idea.
