This spicy Chipotle Chicken with Sweet Potatoes is delicious and easy to make! It takes one skillet and just a little over 30 minutes to prepare. It would be even faster if you already have pre-cut chicken and onions.

I got most of these ingredients at Walmart, and keeping them on hand for a quick go-to meal would be easy.

This looks like something my family would love! Thanks so much for the recipe. Could you tell me where you’ve found the frozen diced sweet potatoes? I haven’t seen them at my local store.

Hi Claire, I found the frozen sweet potatoes at my local Walmart! I haven’t seen them at our other “fancier” grocery store, though.

What would it do to cooking times if I had fresh not frozen sweet potatoes? And I have no onions….just onion powder. Also, the cubed chicken, is it raw or cooked?

        Hi Natalie,
I’m glad you liked it and your substitutions sound good. Yes, I used raw chicken and if you use fresh sweet potatoes it might take just a bit more time, but it seems like sweet potatoes cook pretty quickly.

This is soooo good. Yum. I just made a version of it with what I have on hand: replaced beans with black beans, onion powder, no onions and I did curry powder…no chilli powder and a little cayenne pepper. I also threw in some frozen riced cauliflower and ate it with cottage cheese. Made it a crossover, but wirth it! Sooo good. Thank you for the idea.
