Description

This delicious taco soup recipe is easy to make and is ready in 30 minutes.


Ingredients

Scale
  • 1 lb ground beef
  • ½ of a medium yellow onion, diced
  • 2 teaspoons chili powder
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 2  14 oz. cans diced fire-roasted tomatoes
  • 1 14 oz. can pinto beans
  • 1 14 oz  can black beans
  • 1 14 oz can corn
  • 4 oz can diced green chilis
  • 3 cups chicken broth or beef broth, gluten-free 

*Make sure all canned ingredients are gluten-free!


Instructions

  1. Brown the ground beef in a Dutch oven or large pot, breaking it up as it cooks.
  2. Add the diced onions to the meat and cook for 5 minutes, stirring frequently.
  3. Next, stir in the seasonings.
  4. Then, add the fire-roasted tomatoes, drained beans, drained corn, green chiles, and broth. 
  5. Bring to a boil for 5 minutes, then reduce the heat, allow to simmer for 10 minutes, and then serve.

Notes

Topping suggestions: avocado, jalapeno slices, cheese and dairy-free cheese, sour cream and dairy-free sour cream, tortilla chips, cilantro, lime juice, and green onions. 

It can also be cooked in a slow cooker. Follow steps 1 and 2, then add everything to the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
