    Best Organic Gluten-Free Flour Blend Recipe: Easy 1:1 All-Purpose Mix

    I am so excited to share this organic gluten-free flour blend with you! I’ve been using it in my recipes, and I’m loving the results. I first discovered this blend in Katarina Cermelj’s book The Elements of Baking (from The Loopy Whisk). I immediately thought “oh, I can make this using organic ingredients!” Now, I feel much better about what I am baking for my family, knowing that I can make delicious treats with a great-tasting, fully organic gluten-free blend.

    I love using organic ingredients when I can because it gives me peace of mind when cooking and baking for my family. Produce is organic if it’s grown without synthetic fertilizers or pesticides. For me, it’s a simple way to make our favorite baked goods a little cleaner and more wholesome.

    Ingredients

    Three bags of gluten-free flours. Tapioca, sorghum, and millet. With a food scale and wire whisk.

    Some of the brands that I use are from Anthony’s, Azure Standard, and Quay.

    The three flours that I use are organic tapioca starch, organic sorghum flour, and organic millet flour. I do not add xanthan gum to the mix, instead I add it to each recipe when I make it.

    I add Xanthan gum to the recipes as I make them.

    Instructions

    To make this mix, you will need a food scale, a large mixing bowl, and a wire whisk.

    Start by setting your food scale to grams (g). Then, put the empty mixing bowl on the scale and press the tare button to zero out the weight of the bowl. Next, add tapioca starch until the scale reads 500 grams.

    Press the tare button again to reset the scale to zero. Add the sorghum flour until the scale reads 250 grams.

    Press the tare button once more to reset the seal to zero. Add the millet flour until the scale reads 250 grams.

    Using a wire whisk, mix the three flours thoroughly until they are completely combined.

    Transfer the finished flour mix to a large glass storage jar.

    How to Store

    After mixing the flour mixture together, store the mix in a glass container. I like to use these large glass jars. I always label the jar with the contents and add a note about reminding myself to include xanthan gum in each recipe so I don’t forget.

    If you decide to make a large batches of the mix, I suggest storing the mix in mylar bags with oxygen absorbers. And for long-term storage, store the mylar bags inside a food safe bucket or plastic storage box.

    How to Use

    How much to use: To use this flour blend in your recipes, measure out 130 grams per 1 cup of flour in the recipe.

    Xanthan Gum: Xanthan Gum is a binder that helps gluten-free flour hold together.

    Add ¼ teaspoon of xanthan gum per 1 cup of this flour blend when making cakes, cookies, muffins, and breads.

    Add ½ teaspoon of xanthan gum per 1 cup of this flour blend when making pie crusts and pastries.

    You will need to add ¼ teaspoon of xanthan gum for each cup of the flour blend you use in your recipes. When making pie crusts or pastries add ½ teaspoon xanthan gum per cup of flour.
