A great tasting organic gluten-free flour blend to use in your favorite baked recipes.
Ingredients
- 500 g organic tapioca starch
- 250 g organic sorghum flour
- 250 g organic millet flour
Instructions
- To make this mix, you will need a food scale, a large mixing bowl, and a wire whisk.
- Start by setting your food scale to grams (g). Then, put the empty mixing bowl on the scale and press the tare button to zero out the weight of the bowl.
- Add tapioca starch until the scale reads 500 grams.
- Next, press the tare button again to reset the scale to zero.
- Add the sorghum flour until the scale reads 250 grams.
- Then, press the tare button once more to reset the seal to zero.
- Add the millet flour until the scale reads 250 grams.
- Using a wire whisk, mix the three flours thoroughly until they are completely combined.
- Transfer the finished flour mix to a large glass storage jar.
To use this blend in recipes, measure 130 grams per 1 cup in recipe.
You will need to add ¼ teaspoon of xanthan gum for each cup of the flour blend you use in your recipes. When making pie crusts or pastries add ½ teaspoon xanthan gum per cup of flour.
Notes
Storage: After mixing the flour mixture together, store the mix in a glass container. I like to use these large glass jars. I always label the jar with the contents and add a note about reminding myself to include xanthan gum in each recipe so I don’t forget.
If you decide to make a large batches of the mix, I suggest storing the mix in mylar bags with oxygen absorbers. And for long-term storage, store the mylar bags inside a food safe bucket or plastic storage box.
How to use: To use this flour blend in your recipes, measure out 130 grams per 1 cup of flour in the recipe.
Adding Xanthan Gum: Add 1/4 teaspoon of xanthan gum per 1 cup of this flour blend when making cakes, cookies, muffins, and breads. Add 1/2 teaspoon of xanthan gum per 1 cup of this flour blend when making pie crusts and pastries.
