    Gluten-Free Oatmeal Cookies (Dairy-Free)

    A stack of gluten-free cookies.When you want a deliciously thick and chewy gluten-free oatmeal cookie this is the one. These yummy cookies have the perfect taste and texture. Your family will love these.

    These oatmeal cookies freeze really well too. I’m trying to copy what my grandma did by always having cookies in the freezer. She would always have no bake cookies in her freezer for her grandkids so I’m trying to keep cookies on hand in my freezer for when my family drops in.

    They’re dairy-free and if you want to add in extras like dairy-free chocolate chips or nuts you can.

    Ingredients for Making Gluten-Free Oatmeal Cookies:

    • Gluten-Free Flour Mix – My go-to gluten-free flour mix is Better Batter Gluten-Free Flour. I get consistently good results baking with this blend.
    • Gluten-Free Oats – Make sure to use oats that are labeled gluten-free. Even though oats don’t contain gluten they are processed alongside wheat. So it’s important to make sure you’re using certified gluten-free oats.
    • Dairy-Free Buttery Spread – Smart Balance or Earth Balance
    • brown sugar, eggs, vanilla, baking soda, and salt.
    • Always check your labels to make sure that you’re purchasing gluten-free products.

    How To Make Gluten-Free Oatmeal Cookies:

    Set out the dairy-free buttery spread and eggs to come to room temperature.  Around 10-20 minutes before you’re ready to make the cookies.

    Preheat oven to 350°. Line a baking sheet with parchment paper or silicone baking mat.

    Using a stand mixer cream together the buttery spread and brown sugar, then add in the vanilla extract. Next, add in one egg at a time scraping down the sides as needed.

    In a medium bowl whisk together the gluten-free flour, baking soda, and salt and then add to the creamed mixture. Mix thoroughly and then add in the gluten-free oats.

    Use a cookie scoop to drop cookie dough onto the baking sheet at least 2 inches apart.

    Bake for 13 minutes or until just crispy around the edges. Remove from the oven and let cool on the baking sheet for 5 minutes. Then remove cookies to a wire rack to completely cool.

If you have some loved ones who like chips or maybe just nuts you can divide your cookie dough and add 1/2 to 1 cup of add-ins to half or even a third of your dough.

    Delicious thick and chewy gluten-free oatmeal cookies with crispy edges.


    Ingredients

    Scale

    1 1/2 cups packed brown sugar
    1 cup dairy-free buttery spread (Smart Balance or Earth Balance), room temperature
    2 teaspoon vanilla extract
    2 eggs, room temperature
    1 1/2 cups gluten-free flour mix (Better Batter Gluten-Free Flour)
    1 teaspoon salt
    1/2 teaspoon baking soda
    3 cups gluten-free old-fashioned oatmeal

    Optional add-ins:

    1 cup of the following dairy-free chocolate chips, raisins, or chopped walnuts.
