    Cucumber Tomato Onion Salad

    You’ll love how quick and easy this cucumber tomato onion salad is to make. And the fresh taste of the cucumber, tomato, and onions, mixed with a homemade dill dressing, creates a flavorful and tasty dish. This would be perfect to take to a cookout or for an easy dinner side.

    How to make cucumber tomato salad

    A mixing bowl with cut up cucumbers, tomatoes, and red onions. And a small mixing bowl next to it that has the dill dressing.

    Cut the cucumber in half lengthwise and then thinly slice, dice the tomatoes into bite-sized pieces, slice the red onion, and place them in a large mixing bowl.

    Mix the lemon juice, olive oil, parsley, dill, salt, and pepper in a small bowl, and then mix into the vegetables.

    Serve immediately.

    This is best served the first day, but is still really good for 3-4 days. Store covered in the refrigerator.

    Description

    This cucumber tomato onion salad is so delicious and easy to make. It’s an easy side dish for lunch or dinner and is perfect to take to a cookout.


    Ingredients

    Scale
    • 1 English cucumber
    • 1 lb of Roma tomatoes
    • half of a medium red onion
    • 2 tablespoons lemon juice
    • 2 tablespoons olive oil
    • 1 ½ teaspoons dried parsley
    • 1 teaspoon dried dill
    • 1 teaspoon sea salt
    • ¼ teaspoon black pepper


    Instructions

    Cut the cucumber in half lengthwise and then thinly slice, dice the tomatoes into bite-sized pieces, slice the red onion, and place them in a large mixing bowl.

    Mix the lemon juice, olive oil, parsley, dill, salt, and pepper, and mix into the vegetables.

    Serve immediately.

    You can use a different type of cucumber if preferred. If you do, you may want to deseed and peel them.
