Description

Easy to make gluten-free apple crisp with just a hint of cinnamon. Grain-Free with a sugar-free option.


Ingredients

8 cups sliced apples, peeled and sliced thin. (Around 6 medium to large apples.)*
2 tablespoons sugar
1/4 teaspoon cinnamon

1 cup blanched almond flour
1 cup golden flax meal
3/4 cup coconut oil, melted
1/4 cup gelatin (protein powder), optional but does help give a crispy texture and adds protein.
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon mineral salt

For Sugar-Free Version:

8 cups sliced apples, peeled and sliced thin. (Around 6 medium to large apples.)*
2 tablespoons erythritol, or erythritol based sweetener blend
1/4 teaspoon cinnamon

1 cup blanched almond flour
1 cup golden flax meal
3/4 cup coconut oil, melted
1/4 cup gelatin (protein powder), optional but does help give a crispy texture and adds protein.
1/4 cup erythritol, or erythritol based sweetener blend
1/4 teaspoon stevia (omit if using a sweetener blend)
4 teaspoons baking powder
1/4 teaspoon mineral salt


Instructions

Preheat oven to 375°.

Peel and thinly slice apples. Place apples in 9 x 11 inch baking pan. Mix 2 tablespoons sugar with the 1/4 teaspoon of cinnamon and sprinkle over apples.

Mix almond flour, golden flax meal, sugar, gelatin, baking powder, and salt together and then mix in melted coconut oil. Crumble mixture evenly over apples.

Bake uncovered for 25 minutes and then remove from oven. Lower oven temperature to 325°. Cover with aluminum foil (shiny side up). Bake for 15 more minutes.

Apples should be tender and the crisp should be golden brown.


Notes

*I like to use at least 2 different types of apple to get more flavor like Golden Delicious and Fuji. Look for apples that are listed as being good in baking.

Use Granny Smith apples if you are following THM.
