Description

Easy to make fried summer squash.


Ingredients

Scale
  • 3 tablespoons coconut oil
  • 1/2 cup diced onion
  • 1 medium yellow squash* (around 1 lb.), quartered and sliced in 1/4 inch slices
  • 1 medium zucchini* (around 1 lb.) quartered and sliced in 1/4 inch slices
  • 1/4 teaspoon Herbamare

Instructions

  1. Heat coconut oil in large skillet over medium heat till hot.
  2. Add onion, yellow squash, and zucchini.
  3. Sprinkle Herbamare over squash.
  4. Stir occasionally for about 15-20 minutes until vegetables are tender.

Notes

*If your squash is larger you may want to de-seed it before slicing if preferred.
