Description

Easy to make fried summer squash.


Ingredients

Scale
  • 3 tablespoons refined coconut oil
  • ½ cup diced onion
  • 1 medium yellow squash* (around 1 lb.), quartered and sliced into 1/4 inch slices
  • 1 medium zucchini* (around 1 lb.) quartered and sliced into 1/4 inch slices
  • ¼ teaspoon Herbamare


Instructions

  1. Heat coconut oil in a large skillet over medium heat till hot.
  2. Add onion, yellow squash, and zucchini.
  3. Sprinkle Herbamare over the squash.
  4. Stir occasionally for about 15-20 minutes until vegetables are tender.

Notes

*If your squash is larger, you may want to de-seed it before slicing.
