Description

This Cowboy Caviar Recipe is a tasty dip that will delight any crowd. It’s a great make-ahead dish because it gets better with time.

Dressing ingredients

  • ⅓ cup olive oil
  • ¼ cup of lime juice, around 2 limes
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon nutritional yeast, optional
  • 2 teaspoons Italian seasoning, or 1 teaspoon each of oregano and basil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper

Caviar ingredients

  • 1 15 oz can black-eyed peas, drained and rinsed
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can yellow corn, drained
  • 4 Roma tomatoes, diced
  • 1 bell pepper, any color, diced
  • 1 large avocado, or 2 small avocados, diced
  • 2 jalapenos, diced small
  • ½ cup diced red onion
  • ¼ bunch of cilantro, diced small


Instructions

Start by whisking all the dressing ingredients together. Set aside.

Then, prepare the caviar ingredients and put them into a large mixing bowl. Gently mix. Next, drizzle the dressing over the caviar and mix until everything is coated with the dressing.

Cover and refrigerate for several hours or overnight. It gets better the longer it sits.

It’s best on day 2 and is good through day 4. 


Notes

To keep gluten-free, make sure that the canned goods are gluten-free. 

Frozen or fresh cooked corn can be used instead of the can of corn, if desired.

Pinto beans can be used in place of the black-eye peas. 

Cilantro can be replaced with fresh parsley if preferred.
