These sauteed Brussels sprouts with bacon and tomatoes have become one of my favorite vegetable dishes. It’s like a bacon, lettuce, and tomato sandwich without the bread.
I love finding ways to add nutritious cruciferous vegetables to my diet. When I was younger I never would have imagined that I would crave a recipe that features Brussels sprouts. I’m sure would have laughed at even the suggestion, but this combo is so tasty and satisfying I could easily eat this several times a week.
This recipe is easy to make just some chopping and stirring!
Let’s make Sauteed Brussels Sprouts with Bacon and Tomatoes!
You’ll need to rinse the Brussels sprouts, remove the outer leaves, chop of the bottom core and then quarter lengthwise. This will take a few minutes but it’s so worth it.
Next cut the tomatoes in half and slice the bacon in 1/2 inch slices. Slice through all three pieces of bacon at the same time to make it a little quicker.
Saute the bacon, add in the Brussels sprouts, cook for a few minutes and then add in the minced garlic. Saute for just a few more minutes and remove from heat and add in your slice tomatoes. Season with salt and it’s all ready to enjoy.

Ingredients
1 lb Brussels sprouts
1 cup grape tomatoes
3 strips bacon
1 clove garlic
2 tablespoons avocado or olive oil
Instructions
Rinse the Brussels sprouts. Cut off the bottom and remove the outer leaves. Cut into quarters lengthwise.
Cut the grape tomatoes in half. Mince the garlic clove. Cut the bacon in 1/2 -inch slices.
Heat the avocado oil in a skillet over medium heat.
Saute the bacon in the oil for 3 minutes. Add in the Brussels sprouts and cook for 5 minutes stirring frequently. Add in garlic and stir. Continue cooking for another 2-3 minutes.
Remove from heat and add in tomatoes. Season with salt.
