Chocolate Lava Cake freshly baked in an air fryer.

This quick and easy single serve gluten-free chocolate lava cake may not look too exciting when it first comes out of the air fryer, but be assured there’s lots of yumminess just under the surface! If you don’t have an air fryer this could also be baked in an oven. I love being able to use the air fryer for single serve desserts like this one and not have to heat up the big oven, though. I use an Avalon Bay Air Fryer, it’s simple to use, is reasonably priced, and has great reviews on Amazon. And yes, you could use a microwave in even shorter amount of time, but I haven’t had one for years and I like how the air fryer bakes this cake.

There it is! Chocolatey yumminess!

Just look at that, it’s so satisfying and yummy!

For this blog post, I mixed the cake batter in a different bowl and then poured it into the two-cup glass Pyrex dish, that way the sides would be clean for the pictures, but I normally mix it right in the dish that I’m baking it in.

This pudding is one of my favorite foods ever! I love chocolate and avocados together. Put these two together and you have a powerhouse of nutrition and taste!

You can use cocoa powder or raw cacao powder. Either will taste great, but if you want to pack an extra nutritional boost go for the raw cacao.

All you need are just a few ingredients and an Air Fryer to make these crunchy, delicious kale chips. These kale chips have just three ingredients added to the kale for a delicious flavor – nutritional yeast, Himalayan salt, and avocado oil. I put the avocado oil in my EVO Sprayer to spritz the oil onto the kale, it’s simple and easy to use!

Kale chips before they are air-fried.

Use your hands and gently massage the oil and spices onto the kale pieces. Your hands will get a bit messy, but they’ll clean up easy, so don’t get too bothered by getting oil on them.

Place half of the kale into the basket of the fryer. Your air fryer should have a wire rack that fits inside the basket, place that on top of the kale. As the kale cooks it will get lighter and want to swirl around a bit inside your fryer’s basket. The wire rack will keep them in place.

Air-Fried Kale Chips

Quick and easy to make kale chips in an air fryer.

  • Author: MamaShire

Ingredients

1 bunch kale
avocado oil or olive oil in a spritzer
3 tablespoons nutritional yeast
1/4 teaspoon Himalayan salt

Instructions

Rinse kale and dry it with paper towels or flour sack towel. I like to use kitchen shears to cut off the stem, but a knife will work too. Tear leaves into pieces around 3 inches long and in width. They will shrink as they cook so be sure to have a nice size to begin with.

Place in large bowl and spritz with oil about 10-12 times. Sprinkle with nutritional yeast and salt. Then use your hands to mix it up and massage in the oil and seasoning. Your hands will get messy, but that’s okay just wash them and you’re good to go.

Place half of the kale into the basket of your air fryer. Your air fryer should have come with a wire rack that fits inside the basket. Place that over the kale. This will keep it from blowing around as it becomes dry and lightweight.

Cook it at 350° for 5 minutes. Remove from air-fryer and place in a serving bowl. Repeat with second half of kale.

Enjoy! Make some more tomorrow.

Notes

If there are any pieces that you think are not crisp enough you can put those pieces back in and cook for one more minute. But keep in mind they will cook quick and could get a little burned, so keep an eye on them.

You can experiment with different spices to get make your favorite flavor. I sometimes add just a pinch of cayenne.

These smoothies and frosties are so yummy and refreshing and work perfectly with Trim Healthy Mama!  I have eight different flavors to share with you and I added one more at the end for fun.

  • These smoothies and frosties call for  glucomannan. If you aren’t used to using glucomannan, it’s a healthy starch that is very low carb and adds a thickening, light creamy texture to the shake. I haven’t seen it in stores yet, but you can find it on Amazon. You can make these drinks without it, but you’ll lose a little of the creamy effect and since we’re doing this dairy free we need all the creaminess we can get. I have read where xanthan gum could be used as a substitute, but I haven’t tried that personally. Either Now Glucomannan or THM Glucomannan would work well.
  • The added collagen in this drink gives you a good amount of protein to help make this a more satisfying snack. THM Integral Collagen or Custom Collagen works well in this recipe. It’s also great for your skin and joints.

Goldilocks and the Three Instant Pots

Goldilocks and the Three Instant Pots. Comparing three different sizes – 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

(Some links in this post may be my affiliate links which means I earn a percentage, at no cost to you, when you purchase. See my disclosure policy here.)

Goldilocks and the Three Instant Pots. Comparing the 3 qt., 6 qt., and the 8 qt.

Last year during Amazon Prime Day I purchased a 6 qt. Instant Pot that was on sale. And I quickly realized what a great addition it was to my kitchen. The first thing I made was a continuous beef bone broth. I cooked the broth under pressure and then switched to slow cooking and kept it going for several days. We were having cups of delicious and healthy bone broth everyday and I simply added additional water each day to replace what we had taken from it.

I did take a break from using it for several months after my husband passed away, simply because I didn’t want to cook at all. This spring I started using it again and have come to depend on it. It definitely makes my work in the kitchen easier and simpler.

This year when Amazon Prime Day came (July 10-11) I wanted to get my daughter her own Instant Pot as she’ll be getting married this fall. The one that was on special was the 8 qt. size. When it arrived we realized how much bigger it really was than the one I already had.

Then just a few days later my sister told me about the newest Instant Pot that was a 3 qt. size. I immediately began thinking of ways that this size would be helpful. When it arrived we were instantly struck by how small and cute it was!

Now one thing about Instant Pots is that even though they are called Instant they really aren’t instant. They still need to come up to pressure to cook and that can take several minutes or more. But would the smaller Instant Pot come to pressure quicker and make my meals a little faster? Which one would work best for everyday use?

While I don’t really have gold locks, I did want to test them all out and compare them and see which one I liked best.

So let’s take a look at all three of them.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

Starting out let’s look at their general size. The little 3 qt. is just adorable and lightweight. It would be easy to find a place on your counter for it.

The 6 qt. is a nice moderate height. I have an old farmhouse and the upper cabinets in my kitchen come down low so not very many appliance fit under my cabinets. But this one does! I always pull it out when I cook with it so when I release the steam it doesn’t go directly on the cabinets.

The 8 qt. is definitely a big girl. She isn’t going to be tucked away anywhere. She’s going to be a show stopper and take up her fair share of the space.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

The inside of each pot is where the real action is going to be happening and how much can fit in it.

There are several things to think about when looking at the diameter. A frozen roast of good size isn’t going to fit in the 3 qt. If I’m going to be doing any freezer cooking where I place a frozen meal in the pot to cook I’ll need to be sure to freeze the meal in a container that will be slightly smaller than the diameter of the pot.

Also the “pot in pot” method should be considered too. The “pot in pot” method is cooking foods inside the pot in smaller pots, like ball jars, ramekins, or stackable pans. This method would work in all three sizes, but will be limited with the smaller 3 qt.

To give a comparison of the size of each I placed this large steamer basket inside each one.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

The 3 qt. has room for the steamer with the sides straight up.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

The 6 qt has room for the steamer with the sides spread out about half way.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

The 8 qt. has room for the steamer to spread the sides out about 3/4 the way.

Of course you can close the sides on the steamer and enclose what is being cooked and even layer this above another dish, but this way you can get a feel for the size difference.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

All three of these Instant Pots come with a wire rack, a measuring cup, two spoons, and a little cup that attaches to the back of the pot to catch condensation. They each come with a recipe book, general instruction book, and a quick look sheet.

The Three Instant Pots test:

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

The things that you can cook in the Instant Pot is endless. To that end I have several links at the end of this post featuring delicious recipes that would be just the tip of the iceberg.

So I wanted to cook something that was common and that I had success with already with my 6 qt. pot. I decided to make the brown rice recipe that is included in the recipe book that comes with each Instant Pot. I put the 2 cups of brown rice in each pot. Added in 2 1/2 cups of water and closed the lids. Made sure the steam valve was closed and set the pots on Manual/Pressure Cook for 22 minutes.

As soon as they started I set that timer and watched the pots. I was ready to jot down the time that it took for each one to come to pressure and then begin to do actual 22 minutes of cooking at pressure.

Which one would get to pressure first. I thought that the 3 qt. would be the first, but I was wrong. The first to come to pressure was the 6 qt.

The 6 qt. took 8:47 minutes to come to pressure.

The 8 qt. took 9:46 minutes to come to pressure.

The 3 qt. took 11:15 minutes to come to pressure.

I was really surprised.

When the pots were all done and the pressure had been released the surface area of the pots did seem to make a difference on the final outcome of the rice. All the pots of rice were perfectly cooked, but the width of pot of the 8 qt. seemed to make the rice cook a little more and almost was sticking to the bottom of the pot in a few spots. The 3 qt. rice was the fluffiest and prettiest and there was no sticking at all. The 6 qt. seemed somewhat in the middle, nicely cooked, no sticking, but not as fluffy as the 3 qt.

I really thought the 3 qt. would come to pressure quicker and make the total cooking time less.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

The fact that you can put the food in, close the lid, push a couple of buttons, and then walk away, even out of the kitchen makes this a must have appliance in today’s kitchen. It’s just so easy.

Which one do I like the best?

The 3 qt. didn’t make my rice cook any quicker, but it’s so cute and handy I think I’ll be using it a lot as an additional helper.

The big 8 qt. will go with my daughter when she gets married, but I have a feeling I’m going to miss it. It can hold a lot.

The 6 qt. will probably always be out on my counter ready to go. Is it just right? It’s pretty close, but if I had a growing family I think the 8 qt. would win out. And if my cabinets were just a little higher. 🙂

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

There a lot and I mean a lot of accessories that you can use in your Instant Pot to make your cooking experience even easier. Here are a couple that I recently purchased that I can see myself using frequently.

The pan on the left is a 6″ x 3″ cheesecake pan. When I found out that my future-son-law loves cheesecake I decided I needed to get one of these pans. I’m planning on making Carey’s Cheesecake for him and then I’ll need to find a good dairy-free recipe for us girls. If you know of any please leave me a link in the comments below. This pan fits inside all three sizes of the Instant Pots.

The 3 qt. wire mesh container on the right is great for cooking things like a whole chicken, well actually anything with bones in it and you can pull it right out without having to fish around for them or pour through a strainer. It also came with two handles on the sides and I popped them off so it would easily fit in the Instant Pots. You could bend them straight up, but when I did that part of one side popped off, so I decided to just take them off. This strainer does not fit in the 3 qt. Instant Pot- it’s basically the same size.

Goldilocks and the Three Instant Pots. Comparing three different sizes - 8 qt., 6 qt, and 3 qt of Instant Pots. Which one is just right for you?

And then there’s this glass lid that my sister bought for her Instant Pot. This is the 8 qt. size. This is would be very handy for serving food to guests from your Instant Pot. That way they wouldn’t have to navigate the pressure lid as it can be a little tricky getting on and off if you’ve never handled it. There is a glass lid available for the 6 qt., but the 3 qt. doesn’t have one available yet.

I hope this helped you decide which Instant Pot would be best for you. I’d love to know your thoughts on which size you own or decide to buy and why? Leave me a comment below.

This is my take on P. F. Chang’s Mongolian Beef. They prepare theirs with steak strips and I wondered if we could get the same yummy taste using ground beef. Knowing how easy egg roll in a bowl is to make I decided to combine these two dishes and it turned out amazing.

I decided to use a 16 oz. bag of coleslaw to make this dish even quicker. If you prefer to shred the cabbage yourself you would need about 5 cups and also 1 shredded carrot.

Of course you can use chop sticks to make this dish more fun to eat like my family does, but I can’t seem to get the hang of them so I’ll keep with my fork.

The glucomannan powder in this recipe is a carb-free thickener that can be used as a replacement for cornstarch. This powder is made from the konjac root and it doesn’t take much to achieve it’s thickening power. It’s mixed with the sweetener and ginger to make sure it spreads out nicely as it can clump up if you just drop it into a recipe. I use it in my dairy-free smoothies to get a creamy texture.

Trim Healthy Mamas this recipe is an FP. You can serve this with brown rice and make this meal an E. Keep your portion to 1/4 of the recipe or less to keep it an FP or E.

Mongolian Beef Egg Roll in a Bowl - Gluten-free, Low-carb, THM-FP

Quick and easy to make. THM-FP, E, or S.

  • Author: MamaShire
  • Cook Time: 30 minutes
  • Total Time: 30 minutes
  • Yield: 4 servings
  • Category: Dinner

Ingredients

Instructions

In a large skillet brown the ground beef. Drain off fat and rinse ground beef with hot water to quickly drain off any extra fat. Place ground beef back in skillet and begin reheating on medium heat.

Stir in the sliced green onions and garlic. Carefully pour in the coconut aminos and water and stir to mix.

In a small bowl mix together the erythritol, glucomannan, and ginger. Then add to the skillet.

Drizzle in the blackstrap molasses.

Add in the package of coleslaw. Stir to combine. Cover and let cook over medium heat for ten minutes stirring occasionally.

Notes

Trim Healthy Mamas, this recipe can be used as is, as an FP. And that would be one serving which is 1/4 of the entire dish.

It’s what you serve with it that will change it to an E or an S.

Serve it with brown rice and the rice will give it the good carbs to make it an E.

Serve it with other foods that are in the S category and it will be an S. You won’t need to rinse the beef if you are wanting it to be an S.

If you prefer you can use 5 cups shredded cabbage and 1 shredded carrot in place of the coleslaw.

Dairy-free Cheesy Cauliflower Rice - Gluten Free, Dairy-Free, Low-Carb, THM-S

The butter-flavor coconut oil in this recipe is one of my favorite products. If you are dairy-free you really need to try it – it’s so good. I have found it at my local grocery store for less than the price on Amazon. So be sure to look for it in the baking aisle.

Another good ingredient to keep on hand if you’re dairy free is nutritional yeast. It gives your food a yummy cheesy flavor.

If you like to rice your own cauliflower that would work for this recipe as well, but for ease I like to be able to grab a bag of frozen cauliflower rice.

This cheesy rice is also really good in a bowl with sliced sausage or shredded beef and avocado with just a little bit of salsa.
