MamaShire’s Gluten-Free Baking Blend – low fat, low carb, nut-free, dairy-free. It can be used in Trim Healthy Mama recipes.

This is the Gluten-Free Baking Blend that I have been using for several of the recipes in the new Trim Healthy Mama Cookbook.
The THM Baking Blend is featured in many of the recipes throughout the new THM Cookbook. While I really like the THM Baking Blend, I wanted to have my own blend that I could tweak, and that might be a little less expensive.
My baking blend is not the same as the THM Baking Blend, but it is similar. I like being able to have a big batch made up and ready to go. I’m much more likely to bake something yummy for my family if I have the blend all ready to go.
My blend doesn’t contain almond flour like the THM Baking Blend does because I already use almond flour in a lot of my recipes, and I wanted to have an alternative so that we’re not “always” eating almonds. Plus, this keeps the cost of the blend down. Win, win.
I have listed all the ingredients below and where I like to purchase them. You may be able to find coconut flour and golden flax meal locally, but the other items will probably have to be ordered online. The initial purchase of these items will add up, but you will be able to get quite a bit of baking blend from them.
- The oat fiber that I use is THM Oat Fiber, and it is the ONLY ONE on the market that is certified gluten-free. If you don’t have to eat exclusively gluten-free, you could use this oat fiber.
- Nutiva Organic Coconut Flour is my favorite.
- I get my organic golden ground flax meal at Costco or Amazon. It is cheaper at Costco.
- I use Custom Collagen in my recipe, but THM Integral Collagen would work well, too.
- For the glucomannan, I use Now Brand Glucomannan or THM Glucomannan.

Trim Healthy Mamas this flour blend is an FP, but depending on what you bake with it that could change to an S or an E.
This is a very thirsty flour blend, so it you are creating your own recipe be sure to add enough liquids to keep it happy.

Ingredients
- 1 cup THM Gluten-Free Oat Fiber
- 1/2 cup coconut flour
- 8 tablespoons golden flaxmeal
- 5 tablespoons collagen
- 1 tablespoon glucomannan
Instructions
- Whisk together all the ingredients and store in an airtight jar.
- You can multiply this recipe to make a large batch.

Does this bake quite similar? I use custom collagen fish because I have a major beef allergy. I also cant afford almond flour right now so ive been meaning to experiment for a while…but I have three boys under four lol

Hi Emily, if you are wondering if it bakes similar to the THM Baking Blend, then yes, from my testing it is very similar. Or if you are asking about how the fish collagen would bake, I don’t know the answer to that as I haven’t worked with it before. Sorry about the beef allergy, though. But, I am happy for you about your boys! They must make like extra fun.

This is just what I have been looking for! I’m excited to give it a go. Can you tell me what purpose the flax meal is playing in the mix? I would like to leave it out, or find a different ingredient. I like that this is nut free. What do you think?

Good to hear from you! Hear are a few of my thoughts.
The flax meal is giving the recipe several things – 1) it gives the mix a nice flavor, a little bit more of a wheat taste 2) it gives the mix a great nutritional boost with its omega-3 essential fatty acids, lignans and fiber 3) it helps give the mix some bulk and texture.
Could you leave it out? Yes. I haven’t tried it without, but if you have an allergy to it, by all means leave it out. But, if you don’t have an allergy to it, I would recommend using it. It isn’t expensive and the nutritional benefits are impressive.
I’m not sure what flour to recommend that would have the same benefits, but you could try whole psyllium husks. You could play with the ingredients on a smaller scale and try the blend without the flax and see what you think.
Let me know if you try it without and how it turned out.

I haven’t tried it personally, but I have heard of it being a replacement for it. I know xanthan gum is often used in gluten-free baking, so I would say it should work. 🙂

Do you know if there is anything vegetarian I could substitute for the collagen that would have similar results?

You might be able to use this rice protein powder – http://amzn.to/1PN2X47 . I have some but I have the vanilla flavored rice protein and so I haven’t used it in my blend before. It may take the carb count up a bit so you would have to be careful.

Have you looked into chia flour as a sub for flax? If so would it be subbed 1 for one or at a different amount?

I haven’t looked into subbing chia for the flax, but that would be interesting. I do use chia flour in my pizza crust so I know it can be used as a flour.

I’m so happy to find a substitute for the Baking Blend (without almonds), but my daughter also has a severe coconut allergy! Is there something I could sub for the coconut flour? I’m ready to start with THM, but with my daughter’s allergies I need to find some good substitutes.

Hi Paige, I’ve googled for baking blend substitutes to see if anyone else had a combination without coconut flour and I haven’t been able to find any. You could try creating a blend with ingredients that your daughter can have and figure out the nutrition facts so that you know what category it would fit in. Living with food allergies is so hard. I hope you find a combo that works for your family.
