This savory gluten-free beef stroganoff is a delicious one-pot dinner for an easy weeknight meal.
1 lb ground beef
3 garlic cloves, minced (about 1 tablespoon)
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 teaspoons dried parsley
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon chili powder
4 cups beef or chicken broth (gluten-free)
1 13.6 oz can coconut milk, whisked
8 oz gluten-free noodles (I used Banza rotini)
2 tablespoons cornstarch
1/4 cup cold water
parsley for garnishing (dry or fresh)
In a 12-inch skillet brown the ground beef. Drain off any excess grease.
Add crushed garlic, Dijon mustard, and Worcestershire sauce to the beef. Add parsley, paprika, onion powder, black pepper, salt, and chili powder.
Stir in beef broth and coconut milk and bring to a boil. Add gluten-free noodles, cook for 5 minutes and reduce heat to medium-low.
Mix cornstarch with cold water until dissolved. Stir into the stroganoff and stir occasionally for 5-10 minutes as it thickens.
Garnish with parsley if desired.
Optional: Brown 8 oz. sliced mushrooms with the ground beef.
