This delicious gluten-free version of Egg Roll in a Bowl is easy to make for a quick weeknight meal. It’s great to make for weekday lunches.


  • 1 tablespoon olive oil
  • 1 lb ground beef, pork, or turkey
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 small sweet onion, diced
  • 3 cloves garlic, minced or diced
  • 1 14 oz. bag of coleslaw
  • 1 teaspoon ground ginger
  • 1/4 cup coconut aminos or gluten-free soy sauce
  • 1 tablespoon sesame oil
  • 1/2 cup sliced green onions


  1. Heat olive oil in a skillet over medium heat, and then add in the ground beef. Season the meat with salt and pepper and cook until no longer pink.
  2. Add in the diced onion and continue to cook for another 3-4 minutes. Next, stir in the minced garlic and continue cooking for another 30 seconds.
  3. Add the bag of coleslaw, ground ginger, coconut aminos, and sesame oil to the skillet. Stir and continue to cook for another 5-8 minutes until the cabbage is tender.
  4. Serve with green onions. It can be sprinkled with red pepper flakes for a little heat. It can also be served over rice or gluten-free noodles.
