Description
This delicious gluten-free version of Egg Roll in a Bowl is easy to make for a quick weeknight meal. It’s great to make for weekday lunches.

- 1 tablespoon olive oil
- 1 lb ground beef, pork, or turkey
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 small sweet onion, diced
- 3 cloves garlic, minced or diced
- 1 14 oz. bag of coleslaw
- 1 teaspoon ground ginger
- 1/4 cup coconut aminos or gluten-free soy sauce
- 1 tablespoon sesame oil
- 1/2 cup sliced green onions
Instructions
- Heat olive oil in a skillet over medium heat, and then add in the ground beef. Season the meat with salt and pepper and cook until no longer pink.
- Add in the diced onion and continue to cook for another 3-4 minutes. Next, stir in the minced garlic and continue cooking for another 30 seconds.
- Add the bag of coleslaw, ground ginger, coconut aminos, and sesame oil to the skillet. Stir and continue to cook for another 5-8 minutes until the cabbage is tender.
- Serve with green onions. It can be sprinkled with red pepper flakes for a little heat. It can also be served over rice or gluten-free noodles.
