Delicious and easy to make supper loaded with veggies. Uses only one pot!
1 lb. ground beef, grass fed is possible
1 16 oz bag of coleslaw
1 zucchini, chopped, small to medium (around 2 cups)
1/4 cup chopped onion
2 cups salsa (gluten-free and sugar-free)
1 cup water
3 tablespoons nutritional yeast
1 teaspoon cumin
1 teaspoon Himalayan salt
1/2 teaspoon chili powder
1/4 teaspoon cayenne
1/4 teaspoon black pepper
1. Brown ground beef in large skillet or dutch oven.
2. While the beef is cooking, chop the onion and zucchini.
3. After the beef is browned drain off any excess grease.
4. Add in the rest of ingredients and stir. Cover and cook over medium heat for 20 minutes, stirring occasionally.
If you are following Trim Healthy Mama this is an S. If you prefer you can rinse the ground beef with hot water and it would be an FP meal.
