I use almond milk nearly everyday and there are times when I run out, but can’t get to the store right away to get more.  I recently saw a recipe for tahini milk made with water and tahini and thought that it should work with almond butter, too. I usually have almond butter in the fridge or pantry, so this is my new way to make homemade almond milk. It’s incredibly easy to make and doesn’t require any straining or nut bags like you need when making almond milk from almonds.

Just water and sugar-free almond butter and you are all set to make the easiest homemade almond milk. I usually buy Costco’s Kirkland brand sugar-free almond butter or Zinke Orchards.  I’ve listed a few more ingredients in the recipe, like sunflower lecithin, xanthan gum, stevia, or salt, but you can leave those out if you don’t have them on hand. They do add to the overall texture and taste of the almond milk, though.

I’ll probably still buy almond milk, but when I run out or just want to cut back on groceries, I’ll be making it this easy way.

Ingredients

Scale
  • 2 cups water
  • 2 teaspoons sugar-free almond butter
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon sunflower lecithin or THM Simply Sunflower Lecithin
  • 1/4 teaspoon Now Brand Stevia or a couple “doonks” of THM Stevia
  • pinch of THM Himalayan Mineral Salt

Instructions

  1. Put water in blender first and then add all the other ingredients. Blend for 1 minute.
  2. Store in glass jar in refrigerator. Shake before using.

Notes

You can make almond milk using only the water and almond butter, but the other ingredients help give it a better texture and taste.

    Can you sub Now Brand gluccomanan? I don’t have Xanthum Gum. Only gluccie and guar gum. Thanks!

      Hi Catherine. Between gluccie and guar, I would go with the guar first. I haven’t tried either, but the guar acts very similar to xanthan. I will try the gluccie today and see how it works and let you know.

    Thanks for sharing, good to know–I’ve made homemade Almond milk a few times, but it is pain straining/draining it–this is a nice, quick alternative.

    This is amazing. It is all I use for almond milk. So much better tasting than store bought in my opinion!

    I’m reading a lot lately how much more rich and creamy cashew milk is than almond milk. Wondering if anyone has tried this recipe using cashew butter?
