I think we can all agree that macaroni & cheese is one of the most classic comfort foods. It’s so good! However, when you’re living with dietary restrictions it can seem like you’re not going to be able to have some classics like this. But with my easy-to-make dairy-free and gluten-free version, you won’t be missing out!

Let’s make some yummy Baked Mac & Cheese.
We are going to start with a box mix of Daiya Deluxe Cheesy Mac and add some goodies to it that will make this baked mac & cheese casserole extra yummy. This recipe is my go-to recipe now for holidays and special occasions. When I ask my family if they want some baked mac & cheese with the chips they all say yes!
You should be able to get this at your local grocery store. I’m not sure why but my local grocery store moved our Daiya Cheesy Mac to the area by the boxed meals like Hamburger Helper instead of being by the other boxed macaroni and cheese. If you have any trouble finding it you might check your store in both places.

First, make the macaroni & cheese according to the package directions.
Then we’re going to add in one tablespoon of Smart Balance Buttery Spread and 1/4 cup of unsweetened almond or cashew milk. Mix that all up and place in a greased 8-inch square baking pan or use a pie pan.
Next, we’re going to take 4 cups of gluten-free potato chips and crush them into bite-size pieces and then mix them with 2 tablespoons of melted Smart Balance Buttery Spread. Spread the buttery chips over the macaroni and then bake in a 350° oven for 15 minutes.
This is seriously yummy with the combination of the buttery crunchy topping and the cheesy macaroni. It definitely wins in the comfort factor!

Ingredients
1 10.6 oz box Daiya Deluxe Cheesy Mac
1 tablespoon Smart Balance Buttery Spread
1/4 cup almond milk
Topping:
4 cups gluten-free potato chips, crushed into bite-sized pieces
2 tablespoons Smart Balance Buttery Spread, melted
Instructions
Make the macaroni & cheese according to the package.
Preheat the oven to 350°.
Add to the prepared macaroni & cheese one tablespoon of buttery spread and the almond milk. Stir together and place into a greased 8-inch or 9-inch square baking pan or pie pan.
To make the topping mix the crushed potato chips with the melted buttery spread. Spread this evenly over the macaroni. Bake in the oven for 15 minutes.
