Crispy Baked Chicken Thighs & Legs (Gluten-Free)

These are the most juiciest and crispy baked chicken thighs and legs ever! They are delicious and so easy to make. They would be perfect on a busy weeknight menu to just pop in your oven to bake but special enough for company too. Keep these gluten-free by using only gluten-free spices.

Ingredients to Make Crispy Oven Baked Chicken Thighs:

  • Olive Oil
  • Italian Seasoning*
  • Garlic Powder
  • Paprika
  • Cornstarch
  • Baking powder
  • Salt
  • Pepper
  • 3-4 lbs chicken thighs & legs

The Italian seasoning* and garlic combination make this chicken taste so delicious. (Make sure that your seasoning blend is gluten-free) The paprika adds the right amount of color. And the cornstarch and baking powder are the star ingredients that make the skin so crispy.

How to Make Crispy Baked Chicken Thighs and Drumsticks:

Drying chicken before putting it in the bowl with the seasoning mix.

Place the oven rack in the middle of the oven. Preheat the oven to 400°. Prepare a rimmed baking pan by drizzling a tablespoon of olive oil in the pan.

Mix the dry ingredients with olive oil in a large bowl. Take a paper towel and pat the chicken pieces dry and place them in the oil mixture.

Use your hands and mix the thighs and legs into the oil mixture making sure they are completely covered.

Place the thighs and legs onto the baking pan with the skin side up. Bake for 40 minutes. Use a meat thermometer to check the internal temperature that it’s 165° or make a cut into the thickest part of a thigh and that the juices run clear.

Let the chicken rest for 10 minutes before serving and don’t cut any other pieces. This will help keep the juices in the chicken.

    This is really delicious!!
    We don’t use garlic at all in our house,but didn’t need it. I cut up a whole chicken and used all the parts, and it was so good. Thanks for publishing this recipe.!
