Easy Gluten-Free Chili | Sugar-Free | Chili

I wanted you to have a visual of what to look for when you’re buying gluten-free ingredients.

All but one of these products has “gluten free” labeled directly on their label. They do a great job and it makes my job at the grocery store so much easier! Thank you!

See that little bottle of McCormick’s Chili Powder….the one that doesn’t have a red circle showing off the wonderful “gluten free” label. In a situation like this, looking on the company’s website is the next best thing to see if it’s gluten free or not.

If you’re following Trim Healthy Mama, you know that you want to separate your carbs (E meals) and fats (S Meals) for your meals. When I use ground beef in an E meal (a meal that contains a healthy amount of carbs) I will rinse off the cooked beef with hot water to rinse off any extra fat. In the picture above I’m using hot water from my tea kettle to do the rinsing.

Easy Gluten-Free Chili

This is such an easy meal to put together and you could certainly use an Instant Pot to cook it in, but putting it in a big pot like this one and using my stove top doesn’t take long at all. I usually brown the ground beef in my big 6-quart Lodge Dutch oven and then rinse it off, put it back in the pot with all the other ingredients and let it cook for about 20-25 minutes. Of course, you can let it simmer for much longer if you like, but after 20 or so minutes it’s ready. After browning the beef you could also put all the ingredients in a slow cooker for on low for 4 hours.

Easy Gluten-Free Chili

Easy Gluten-Free Chili

This makes a large pot of chili.This recipes makes an E meal for Trim Healthy Mamas, if you aren’t following THM rinsing the beef is optional.

Ingredients

2 lbs grass-fed beef, rinsed with hot water to remove excess fat.
2 cups chicken broth or beef broth
2 15 oz cans dark red kidney beans
1 15 oz. can diced tomatoes
1 15 oz. can crushed tomatoes
1 15 oz can refined beans
1 24 oz jar Pace Picante sauce
2 tablespoons chili powder

Instructions

Brown the ground beef in a large dutch oven. Rinse the ground beef with hot water to remove excess fat.

Return beef to the dutch oven and add the rest of the ingredients. Stir occasionally as you bring it to a boil over medium-high heat and then turn down to low. This will be ready in about 20 minutes. You can let this simmer for much longer if you would like.

Slow cooker directions:

After browning and rinsing the beef, put all ingredients in the slow cooker and cook on low for 4 hours.

Notes

This recipes makes an E meal for Trim Healthy Mamas, if you aren’t following THM rinsing the beef is optional.

Leftovers freeze well.

I know when you think of a recipe like this you’re usually thinking buffalo chicken wings, but I like drumsticks better than wings. So here’s a recipe for you for Buffalo chicken drumsticks made in an air fryer. The air fryer that I use is an Avalon Bay Air Fryer. It’s super easy to use and it’s price point is easier on the budget.

One of the reasons I like frying my chicken in an air fryer is because you don’t have to keep such a close eye on it like you do when you’re frying it in a bunch of oil, plus you’re not using a lot of oil!

Tips for air-fried chicken:

Before you put your chicken in the air-fryer, dry it with a paper towel to get rid of any excess moisture.

Once you place your chicken in the basket, spritz it with avocado or olive oil using a mister/sprayer. My favorite mister/sprayer is this Evo set. It’s easy to keep avocado oil in one and olive oil in the other so that you have either for whenever you need them.

Another tip for when you are using the air-fryer or frying anything is if you give your food a light sprinkling of pepper and then when it’s time to turn them over it’s easy to see which ones you have already turned.

I use glucommanan powder in my sauce to thicken it. If you haven’t used it before, it’s a low-carb thickener and you do not need to use very much. If you buy a container of it, it will last a long time. I use it in a lot of my frosty type drinks, like Frosted Lemonade and Frosted Mocha.

My favorite brand of store-bought mayonnaise is Just Mayo. I like that it’s free of a lot of the common allergen’s including soy! I have a family member that can’t have soy and so many times when you find something gluten free and dairy free it will include soy. So Just Mayo makes this mama happy! Of course, if you prefer you can make your mayo from scratch.

Air Fryer Buffalo Chicken Drumsticks

Deliciously crisp and tender chicken legs with a creamy buffalo sauce.

Ingredients

5-6 chicken legs (depends on the size of your air-fryer’s basket)
Avocado oil or olive oil in a mister
salt & pepper to taste
1/2 cup gluten-free chicken broth
2 tablespoons mayonnaise (I like Just Mayo)
2 tablespoons Frank’s hot sauce
1/4 teaspoon onion powder
1/4 teaspoon glucomannan powder

Instructions

Rinse chicken legs and pat dry with a paper towel. Mist the air-fryer basket with oil and place chicken legs in the basket. Mist the top side of the chicken legs with oil and sprinkle with salt and pepper.

Air fry the chicken legs at 375° for 10 minutes. Turn the legs over and spritz with oil and lightly sprinkle with salt and pepper. Air fry again for 10 minutes.

Check on the chicken legs, they will need 5-10 more minutes of air frying so give them another spritz of oil and turn them if needed then continue air frying.

After about 20 minutes of air frying the chicken legs, begin making the sauce. Put the chicken broth, mayonaise, hot sauce, onion powder in a small pan over medium-low heat and whisk to make smooth. While whisking slowly add the glucomannan powder. Whisk for about a minute and continue heating on medium-low heat.

Whisk the sauce a few times as it heats up. It will begin to thicken after 5-6 minutes. Do not add anymore glucomannan. It really only takes a little bit to thicken. Once it’s heated and thickened remove from heat.

Check the legs. They should be crispy and fried. Use a fork and knife and cut one to make sure the juices are clear. The meat should be very tender.

Use tongs to move legs to a serving platter and pour the buffalo sauce over the legs. You can also put some of the sauce in a small bowl to use as a dipping sauce. Enjoy!

  • 1 cup boiling water
  • 1 Peach Passion tea bag (Celestial Seasonings)
  • 1 True Blueberry tea bag (Celestial Seasonings)
  • 2 tablespoons raw apple cider vinegar
  • 1/2 teaspoon Now Better Stevia or a couple of “donks” of THM Stevia Extract
  • 2 pinches of ginger, add additional amount to suite your taste

Ingredients

Steep tea bags in 1 cup of hot water in quart jar for 5-10 minutes. Remove tea bags and add apple cider vinegar, stevia, and ginger. Give it a good stir and then add ice and water to fill jar.

This quick and easy single serve gluten-free chocolate lava cake may not look too exciting when it first comes out of the air fryer, but be assured there’s lots of yumminess just under the surface! If you don’t have an air fryer this could also be baked in an oven. I love being able to use the air fryer for single serve desserts like this one and not have to heat up the big oven, though. I use an Avalon Bay Air Fryer, it’s simple to use, is reasonably priced, and has great reviews on Amazon. And yes, you could use a microwave in even shorter amount of time, but I haven’t had one for years and I like how the air fryer bakes this cake.

Just look at that, it’s so satisfying and yummy!

For this blog post, I mixed the cake batter in a different bowl and then poured it into the two-cup glass Pyrex dish, that way the sides would be clean for the pictures, but I normally mix it right in the dish that I’m baking it in.

Ingredients

1 egg
2 tablespoons cocoa powder
2 tablespoons water
2 tablespoons non-GMO erythritol
1/8 teaspoon Now Brand Better Stevia
1 tablespoon golden flaxmeal
1 tablespoon coconut oil, melted
1/2 teaspoon aluminum-free baking powder
dash of vanilla
pinch of Himalayan salt

Instructions

Whisk all ingredients in a two-cup glass Pyrex dish or ramekin.
Preheat air fryer at 350° for just a minute.
Place glass dish with cake mix into air fryer and bake at 350° for 8-9 minutes.
Carefully remove dish with an oven mitt.
Let cool for a few minutes and then enjoy!

All you need are just a few ingredients and an Air Fryer to make these crunchy, delicious kale chips. These kale chips have just three ingredients added to the kale for a delicious flavor – nutritional yeast, Himalayan salt, and avocado oil. I put the avocado oil in my EVO Sprayer to spritz the oil onto the kale, it’s simple and easy to use!

Use your hands and gently massage the oil and spices onto the kale pieces. Your hands will get a bit messy, but they’ll clean up easy, so don’t get too bothered by getting oil on them.

Place half of the kale into the basket of the fryer. Your air fryer should have a wire rack that fits inside the basket, place that on top of the kale. As the kale cooks it will get lighter and want to swirl around a bit inside your fryer’s basket. The wire rack will keep them in place.

Air-Fried Kale Chips

Air-Fried Kale Chips

Quick and easy to make kale chips in an air fryer.

Ingredients

1 bunch kale
avocado oil or olive oil in a spritzer
3 tablespoons nutritional yeast
1/4 teaspoon Himalayan salt

Instructions

Rinse kale and dry it with paper towels or flour sack towel. I like to use kitchen shears to cut off the stem, but a knife will work too. Tear leaves into pieces around 3 inches long and in width. They will shrink as they cook so be sure to have a nice size to begin with.

Place in large bowl and spritz with oil about 10-12 times. Sprinkle with nutritional yeast and salt. Then use your hands to mix it up and massage in the oil and seasoning. Your hands will get messy, but that’s okay just wash them and you’re good to go.

Place half of the kale into the basket of your air fryer. Your air fryer should have come with a wire rack that fits inside the basket. Place that over the kale. This will keep it from blowing around as it becomes dry and lightweight.

Cook it at 350° for 5 minutes. Remove from air-fryer and place in a serving bowl. Repeat with second half of kale.

Enjoy! Make some more tomorrow.

Notes

If there are any pieces that you think are not crisp enough you can put those pieces back in and cook for one more minute. But keep in mind they will cook quick and could get a little burned, so keep an eye on them.

You can experiment with different spices to get make your favorite flavor. I sometimes add just a pinch of cayenne.

These smoothies and frosties are so yummy and refreshing and work perfectly with Trim Healthy Mama!  I have eight different flavors to share with you and I added one more at the end for fun.

  • These smoothies and frosties call for  glucomannan. If you aren’t used to using glucomannan, it’s a healthy starch that is very low carb and adds a thickening, light creamy texture to the shake. I haven’t seen it in stores yet, but you can find it on Amazon. You can make these drinks without it, but you’ll lose a little of the creamy effect and since we’re doing this dairy free we need all the creaminess we can get. I have read where xanthan gum could be used as a substitute, but I haven’t tried that personally. Either Now Glucomannan or THM Glucomannan would work well.
  • The added collagen in this drink gives you a good amount of protein to help make this a more satisfying snack. THM Integral Collagen or Custom Collagen works well in this recipe. It’s also great for your skin and joints.

This is my take on P. F. Chang’s Mongolian Beef. They prepare theirs with steak strips and I wondered if we could get the same yummy taste using ground beef. Knowing how easy egg roll in a bowl is to make I decided to combine these two dishes and it turned out amazing.

The atmosphere and the food of P. F. Chang’s is so wonderful and to be able to recreate this taste at home and inexpensively is a win for me!

I decided to use a 16 oz. bag of coleslaw to make this dish even quicker. If you prefer to shred the cabbage yourself you would need about 5 cups and also 1 shredded carrot.

Of course you can use chop sticks to make this dish more fun to eat like my family does, but I can’t seem to get the hang of them so I’ll keep with my fork.

The glucomannan powder in this recipe is a carb-free thickener that can be used as a replacement for cornstarch. This powder is made from the konjac root and it doesn’t take much to achieve it’s thickening power. It’s mixed with the sweetener and ginger to make sure it spreads out nicely as it can clump up if you just drop it into a recipe. I use it in my dairy-free smoothies to get a creamy texture.

Trim Healthy Mamas this recipe is an FP. You can serve this with brown rice and make this meal an E. Keep your portion to 1/4 of the recipe or less to keep it an FP or E.

Instructions

In a large skillet brown the ground beef. Drain off fat and rinse ground beef with hot water to quickly drain off any extra fat. Place ground beef back in skillet and begin reheating on medium heat.

Stir in the sliced green onions and garlic. Carefully pour in the coconut aminos and water and stir to mix.

In a small bowl mix together the erythritol, glucomannan, and ginger. Then add to the skillet.

Drizzle in the blackstrap molasses.

Add in the package of coleslaw. Stir to combine. Cover and let cook over medium heat for ten minutes stirring occasionally.

Notes

Trim Healthy Mamas, this recipe can be used as is, as an FP. And that would be one serving which is 1/4 of the entire dish.

It’s what you serve with it that will change it to an E or an S.

Serve it with brown rice and the rice will give it the good carbs to make it an E.

Serve it with other foods that are in the S category and it will be an S. You won’t need to rinse the beef if you are wanting it to be an S.

If you prefer you can use 5 cups shredded cabbage and 1 shredded carrot in place of the coleslaw.

Simple ingredients go together to make this easy comfort meal. Growing up this would be something that my mom or my grandmother would put together and cook in their pressure cookers. With the Instant Pot, it’s even easier and way less scary. I remember my mom telling us kids to get out of the kitchen when she was using the pressure cooker. It seemed scary to us, but maybe that was her way of getting a few minutes of quiet.

Dicing the onion and slicing the sausage will be the only work that you’ll have to do to put this meal together. You could also use diced frozen onions for an even simpler prep time. Put all the ingredients in the Instant Pot with 2 cups of chicken broth, secure the lid and set 6 minutes on the manual setting. When the time is up use the quick release method of releasing the steam.

  • I like Miller Chicken Sausage because it’s free of gluten, nitrites, nitrates, and comes in at just 2 grams of carbs per link. If you don’t have this brand in your area you can use any other sausage that you would like as long as it’s on plan with Trim Healthy Mama ( 2 grams of carb or less per serving)
  • I also use Herbamare seasoning, it’s a favorite of our family, but you can use your favorite seasoning salt.
  • Depending on the fat grams in the sausage this could drop into an FP meal.

Quick and easy supper made in an Instant Pot.

Ingredients

  • 2 cups gluten-free chicken broth
  • 2 16 oz. frozen green beans
  • 1 16 oz. chicken sausage, sliced
  • 1/2 onion, diced
  • 2 teaspoons Herbamare
  • salt & pepper to taste

Instructions

  • Place all ingredients in the Instant Pot. Place lid on and close making sure the steam vent is closed.
  • Use manual setting and set at 6 minutes.
  • When cook time is finished use the quick release method to let off the steam.

Air Fried Asparagus - Low Carb, THM-FP

These tasty asparagus spears are so simple to make. I’ve made these in the oven before, but using the Air Fryer makes it even quicker and easier. There is no need to preheat the oven, it doesn’t heat up the kitchen like an oven does, and one of my favorite reasons to use the air fryer is the ease of clean-up. The inside basket and base basket are light weight and a breeze to clean.

Lightly spritz the asparagus with avocado oil or olive oil using an oil spritzer like this Evo Oil Sprayer. I bought this set of two when I bought the air-fryer and I really like how easy they are to use. You could also cut your asparagus up into smaller lengths, but I really like how dramatic they look long. Ha.

This recipe makes it easy for me to get more vegetables in my diet. I made the green beans and sausage recipe in my Instant Pot while the asparagus was cooking in my Air Fryer and it was all so easy and the kitchen didn’t get hot at all.

Ingredients

  • 1/2 bunch of asparagus, with bottom 2 inches trimmed off
  • Avocado or Olive Oil in an oil mister or sprayer
  • Himalayan salt
  • Black pepper

Instructions

  1. Place trimmed asparagus spears in the air-fryer basket. Spritz spears lightly with oil, then sprinkle with salt and a tiny bit of black pepper.
  2. Place basket inside air-fryer and bake at 400° for 10 minutes.
  3. Serve immediately.
