Spicy Bacon Chicken Bake

I serve this yummy casserole on lightly salted baked spaghetti squash. If you’ve never made spaghetti squash, don’t wait any longer. You need to do it. It’s such a fun veggie. You can also serve this as a dip like my sister did in the comments below!

See my post on How to Cut and Cook a Spaghetti Squash for an easy way to make spaghetti squash!

I added sheep cheese to this recipe, but if you need to keep it completely dairy free, feel free to leave it out. You can add an additional tablespoon of nutritional yeast to boost the cheesy flavor.

A cute little bowl of frozen blueberries

This yummy drink has a full serving of blueberries. I used frozen blueberries in this recipe, but fresh will work too.

Frosted Blueberry Lemonade with bowl of blueberries.

The collagen is optional, but using it will give you a good serving of protein and it has so many health benefits. My favorite brands of collagen are Custom Collagen and Integral Collagen.

I love to use reusable straws with my drinks, like these metal straws. I was looking at these metal straws too, I think the different sizes would be so handy.

If you are following Trim Healthy Mama, this recipe as written in an E (energizing). If you would like to make it an FP (fuel pull) lower the amount of blueberries in the recipe to 1/2 cup.

  • Yield: 1 serving
  • Category: Drinks

1 cup blueberries, fresh or frozen
1/2 teaspoon glucomannan (optional)
3 cups ice cubes (around one tray)

Instructions

Put milk, lemon juice, collagen, stevia, salt, and blueberries in blender and mix until blueberries are completely blended.
This next step is only if you are adding glucomannan which is optional. (It will make the drink more creamy) With the blender on low speed add the glucomannan and blend on low for 20 seconds or so until the glucomannan in incorporated.
Add ice cubes to the blender and mix until the ice cubes are completely blended.

Notes

If using frozen blueberries you may want to add a bit more milk or a few less ice cubes as it may get really thick.

Lemonade Good Girl Moonshine - MamaShire.com

This version of the Good Girl Moonshine adds in some lemon juice for a delightful, healthy lemonade. This is a sipper drink in that it can be sipped on throughout the day. I also have the Strawberry Lemonade version listed in the recipe, but this one should be drank in a shorter time period, due to the carbs in the strawberries. If you prefer to keep it a sipper drink, add a few whole strawberries to the drink to float around and flavor it.

  • Use raw apple cider vinegar “with the mother” like Bragg Organic ACV. You should be able to find it in your local grocery store. Since apple cider vinegar is rather tart, start off with the smaller amount and work your way up to get used to it.
  • If you aren’t sure if you like the taste of ginger, just put a few shakes of powdered ginger in your drink and then slowly adjust it over time to get up to a teaspoon of it in your drink.
  • When drinking apple cider vinegar throughout the day it’s best to use straws. It helps keep the acid from the ACV off of your teeth. Our favorite straws are these metal straws.  ACV can actually whiten your teeth, but should be rinsed off. You can read more about the health benefits of ACV here.

Ingredients

For Strawberry Lemonade Good Girl Moonshine

  • All of the above
  • 2-3 small strawberries

Instructions

  1. Put the apple cider vinegar, ground ginger, lemon juice and stevia in a quart size ball jar and then add desired amount of ice and fill the jar with water. Stir and enjoy.
  2. This is a sipper drink that you can enjoy throughout the day.

Strawberry Lemonade Good Girl Moonshine

  1. Blend strawberries in blender with about 1 cup of water. Add to the above mixture. With the strawberries blended in the drink this adds a small amount of carbs and should not be sipped on throughout the day, but rather enjoyed in a smaller amount of time.
  2. Or just add in the whole strawberries and let them float around flavoring your drink. Super fun!

Lazy Grain-Free Chicken Nuggets

(This post contains affiliate links. Any purchases you make through my links will provide me with a small commission at no extra charge to you. Thank you for your support!  See my disclosure policy here.)

Lazy Grain-Free Chicken Nuggets

I don’t remember when chicken nuggets first came on the scene, but I think the first nuggets I had were at McDonalds years ago. I thought they were pretty wonderful, especially dipped in honey-mustard sauce.

Lazy Grain-Free Chicken Nuggets

Since going gluten-free and following Trim Healthy Mama, I need to make this family favorite from scratch.  I call these lazy chicken nuggets because there are days, probably more often than not, that I don’t want to have to do much to get supper on the table.

So, instead of dipping the little chicken pieces in eggs and then picking each one out and then dredging them in the batter, I just pour the eggs on the chicken and then pour the breading over it all. Give it a stir and then get them to frying. The hardest part of this recipe is cutting the chicken breasts into pieces.

I use red palm oil in this recipe, because I think it adds a wonderful flavor and a lovely golden color to your food. If you don’t have any feel free to use coconut oil only.

Lazy Grain-Free Chicken Nuggets

Lazy Grain-Free Chicken Nuggets
  • Author: MamaShire
  • Yield: 5 servings
  • Category: Dinner

Ingredients

  • 3 chicken breasts
  • 2 whole eggs, or 2 egg yolks (only if you already have some separated), whisked with a fork
  • 1/2 cup flaxmeal
  • 1/2 cup coconut flour
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4-1/2 teaspoon mineral salt
  • 4 tablespoons red palm oil
  • 3 tablespoon coconut oil

Instructions

  1. Cut chicken breasts in 1 to 2 inch pieces.
  2. Begin heating skillet with red palm oil and coconut oil over medium heat.
  3. Place chicken breasts in pie pan or other shallow dish.
  4. Pour eggs over chicken and stir around with a fork, making sure that the egg covers the chicken pieces.
  5. In a small bowl mix flaxmeal, coconut flour, spices, and salt together. Spread over chicken. Stir chicken around to coat with the breading.
  6. Once the oil in the skillet is hot, carefully place chicken in skillet without crowding too much. If all the chicken doesn’t fit in the skillet you may need to fry a second batch, if so add a little more oil to the pan before frying the second batch. Or use 2 skillets at the same time.
  7. Turn after 4-5 minutes and continue frying on other side another 4-5 minutes or until golden brown.

Spice Cake (Gluten-Free, Dairy-Free, Sugar-Free)

Moist Gluten-Free Spice Cake – perfect cake for fall or anytime! Family favorite! Dairy-Free, Sugar-Free, Low-Carb. Trim Healthy Mama – S

Spice Cake - Gluten-Free Recipe by MamaShire

(Some links in this post may be my affiliate links which means I earn a percentage, at no cost to you, when you purchase. See my disclosure policy here.)

Happy fall, everyone! It’s such a wonderful time of the year. We’re bringing out our sweaters, the trees are beginning to change colors, the fields are turning all golden as harvest time is fast approaching. Early mornings are crisp and cool. I love it all. And then there is the baking.

Spice Cake - Gluten-Free Recipe by MamaShire

One of my husband’s favorite cakes is spice cake. I remember when I first made him one, I had searched high and low over all those boxed cake mixes in the grocery store trying to find the right one. Brought it home and baked it up. He loved it. It made me happy to make him happy. Isn’t that what baking is all about?

Spice Cake - Gluten-Free Recipe by MamaShire

Since that time a few things have changed. When our family went gluten-free, I made a list of our favorite foods and began a mission to replace those recipes with ingredients that we could eat. Spice cake was on that list! I love that this cake is not only gluten free but grain-free too!

You can frost your cake with my Vanilla Frosting Recipe or with your favorite recipe. This cake fits wonderfully on the Trim Healthy Mama plan and is an “S”.

Jamaican Jerk Chicken & "Rice" served with lime wedges!

This easy to make dinner recipe is from Carolyn Ketchum’s brand new cookbook Easy Keto Dinners! It’s coming out in just a few days and is available for pre-order now!

I’ve been having so much fun looking through this cookbook and trying to decide what I wanted to make first!

Picture of Carolyn Ketchum's cookbook, Easy Keto Dinners.

Carolyn was so kind to let me share one of her recipes with you!

I decided to go with Jamaican Jerk Chicken & “Rice” because I used to use a store-bought Jamaican Jerk marinade for my chicken before our family went gluten free.  And I hadn’t tried to recreate that flavor so I was excited to try Carolyn’s recipe for the Jamaican Jerk seasoning!

One-pot Jamaican Jerk Chicken & "Rice" Dinner in a cast iron skillet.

I loved that this recipe was easy to make and I used only one pan! To make prep time even easier I used frozen diced onions and frozen riced cauliflower.

All the recipes in Carolyn’s new cookbook look to be very easy to make and look so good – there’s a picture for every recipe! A few of the other recipes I’m looking forward to trying are Buffalo Chicken Chowder, French Onion Pot Roast, and Bacon Sloppy Joes.

About half of the recipes in Easy Keto Dinners are dairy free! That’s really important for me as my family and cow-dairy just don’t get along well.

Easy Jamaican Jerk Chicken recipe with lime wedges

When I shared this with my daughter, she loved it and wanted to know where the recipe was because she didn’t want to ever lose it! She also told me she wanted to have this weekly! Well, okay then! We gave this recipe and the whole book a 2 thumbs up!

Easy one pot dinner of easy homemade hamburger helper - Taco version

Years ago, I would use a lot of boxed mixes. They were easy and there was usually coupons for them making this type of meal very inexpensive.

One day when I was having my daughters help me with supper I told them to just read the box to know how to make it. It hit me that day, that I needed to teach them more about cooking with real ingredients and not just purchased mixes.

Later when we had to switch to eating gluten and dairy free it was a blessing that we had already begun cooking with whole foods as it made the transition easier. Don’t get me wrong, it was still hard, but I think overall it helped that transition to make more sense.

These two easy homemade hamburger helper variations are so easy to make! Yes, it does called for a couple of packaged short cuts, but they are still healthy options to make supper come together quickly and inexpensively!

One ingredient you might not be used to using is nutritional yeast. It’s fairly inexpensive and gives food a wonderful cheesy flavor. I use it in a lot of my recipes. It’s also a good source of B vitamins.

If you are following Trim Healthy Mama these meals are an S. If you prefer you can rinse the ground beef with hot water and they would be an FP meal.
