A delicious side dish of roasted red potatoes made quick and easy in the air fryer.
2 lb. red potatoes, chopped, leave skin on
1 medium onion, chopped
2 tablespoons olive or avocado oil
2 tablespoons prepared mustard*
1–2 tablespoons dried parsley
1/2 teaspoon black pepper
1/4 teaspoon salt
Mix all ingredients in a large bowl. Spread potato mixture evenly in the air fryer basket.
Cook at 400° for 25 minutes. Stirring after 10 minutes and again 10 minutes later.
To reheat leftovers heat in the air fryer for 3-4 minutes.
*make sure mustard is gluten-free. I use French’s mustard.
