    Description

Delicious BBQ meatballs that cook up in just minutes! Gluten-free & Dairy-free

    Ingredients

    Scale

    Meatballs
    1 lb ground beef
1/2 cup soft or dry gluten-free bread crumbs
1/2 cup unsweetened almond or cashew milk
    1 egg
    1 teaspoon chili powder
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/2 teaspoon salt
    1/4 teaspoon pepper
Avocado oil or olive oil in a spritzer

    BBQ Sauce
    1 cup ketchup
2 tablespoons evaporated cane sugar or honey
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/4 teaspoon liquid smoke

    Instructions

In a large bowl, combine all the meatball ingredients together. Using a stand mixer is the easiest way to mix this or can be done by hand.

Use a cookie scoop to make meatballs a little over 1 inch in diameter. Place in meatballs in basket of air fryer.

Spritz the meatballs with avocado oil or olive oil.

Cook in air fryer at 350° for 10 minutes.

While the meatballs are cooking combine the BBQ sauce ingredients.

Spoon BBQ sauce liberally over each meatball and cook for 5 more minutes.

    Notes

For the bread crumbs, I save the heels of our gluten-free bread (Canyon House) and store them in a freezer bag in the freezer. When I have several slices I run it through my food processor to make bread crumbs. I’ve made this with dried or fresh bread and it works great with both.

Could I use cooked brown rice as a binder instead of breadcrumbs?

I haven’t tried that before so I don’t have a good answer. If it’s sticky it may work.

If I don’t want to use the sauce do I still cook that extra 5 minutes? THANKS!

You’ll want to cook them an extra 3-5 minutes. Just check on them around 3 minutes to see if they need any more time.
