Strawberries and lime complement each other in a delightful way in this slushy drink. You may have had a version of this at a drive-thru made with regular sugar-filled soda, but this healthy version is full of fruit and sweetened with only stevia.

If you want to make this a full snack add in the collagen for a nice serving of protein. Trim Healthy Mama Integral Collagen or Custom Collagen are my favorites.

Ingredients
  • 1 cup water
  • 2 cups frozen strawberries
  • 3-4 tablespoons lime juice (juice from 1 lime)
  • 2 "doonks" THM Stevia or ½ teaspoon of Now Better Stevia
  • 2 tablespoons collagen (optional)
  • 2 cups ice cubes
Instructions
  1. Place all ingredients in blender in the order listed.
  2. Blend until completely blended.
  3. Enjoy!

Enjoy the taste of the tropics with this Mango Vanilla Frosty!  It’s the perfect drink to enjoy on a hot summer day!

This recipe can also be placed into popsicle molds for a super cold delicious treat!

Trim Healthy Mamas this frosty is an E. If you make this recipe into popsicles, it would make a popsicle an FP, since the whole recipe is just a tiny bit over the carb limit for FP. Yay!

Mango Vanilla Frosty

Serves: 1 quart
Ingredients
  • ½ cup frozen or fresh mango
  • ⅔ cup unsweetened almond milk
  • 1 tablespoon collagen (optional)
  • 1 teaspoon vanilla
  • ½ teaspoon Now Better Stevia or 4 "doonks" of THM Stevia Extract
  • 2 pinches Himalayan salt or mineral salt
  • ½ teaspoon glucomannan
  • 3 cups ice, around 1 tray
Instructions
  1. Place mango, almond milk, collagen, vanilla, stevia, and salt in blender. Blend until smooth.
  2. With the blender on low slowly add glucomannan, blend for 20-30 seconds.
  3. Stop blender and add in the ice. Then blend until completely smooth.
  4. Serve in a 1 quart jar or smaller jars to share.
  5. Can also be placed in popsicle molds and frozen. Let frozen popsicles sit at room temperature for about 5 minutes before eating. They will be a little creamier that way.

I remember when I was younger my mom and I stopping by my future husband’s home and visiting with him. We had just stopped at Dairy Queen and picked up a strawberry banana shake – my favorite. I remember us all standing by his front porch and talking while I was sipping on that shake and thinking he is so handsome. It’s funny how food can be so attached to a memory isn’t it?

Now days I keep away from dairy and sugar so I had to come up with a replacement. This shake brings me right back to that summery day years ago and it’s still so yummy. Plus, now I can serve it to that handsome man I married and feel good about giving him a good, healthy treat.

  • I add collagen in my drinks to get an extra boost of nutrition and protein. It’s optional, but I think you would like it. You can read about all the benefits of collagen at Dr. Axe’s site. I recommend Custom Collagen or THM Integral Collagen.
  • I also add glucomannan to my shake to help thicken it up a little and give it a bit of creaminess. Without having cow-dairy you have to work a little harder to get that lovely creamy effect and the glucomannan really helps with that. Be careful to add it slowly to your foods when you use it, as it can clump up if not. It’s a healthy, no-carb, starch and a little goes a long way. I recommend Now Glucomannan or THM Glucomannan

Ingredients
Instructions
  1. Put almond milk, strawberries, bananas, collagen, stevia, salt, and vanilla in blender and blend until well combined.
  2. With blender on low, slowly add in glucomannan. Let it continue blending for 30 more seconds.
  3. Turn off blender and add in ice cubes. Blend until smooth.
  4. Pour into a quart jar for one serving or smaller jars to share.

My youngest daughter, Emily Rose, is an excellent photographer and has been teaching me the ins and outs of phototgraphy. Often times when I get my food all set up for a shoot, she’ll go grab her camera and have some fun shooting, too. I found this photo on her camera capturing me “trying” to get the right shot. When you see an excellent photo on my blog, just know that it’s probably her work.

This spicy dish is delicious and super easy to make! It takes one skillet and just a little over 30 minutes to prepare. If you already have pre-cut chicken and onions, it would be even faster.

I was able to get most of these ingredients at Walmart, so this is a budget friendly meal and it would be so easy to keep these ingredients on hand for a quick go to meal.

I love to use chipotle chili in recipes, it adds a nice spicy kick. I normally use Spice Island Chipotle Chili Powder, if you can’t find it or another brand locally this chipotle chili from Amazon would be great.

Chipotle Chicken with Sweet Potatoes

Ingredients
  • 1 tablespoon coconut oil
  • 2 chicken breasts, cubed
  • 2 10 oz. bags frozen diced sweet potatoes
  • 1 10 oz. bag of frozen spinach
  • 1 cup of frozen diced green pepper
  • ½ cup chopped onion
  • 1 15 oz can of kidney beans, drained
  • ½ teaspoon ground chipotle chili
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • mineral salt and pepper to taste
Instructions
  1. Heat coconut oil in large skillet over medium heat until melted. Add cubed chicken and stir fry for a couple of minutes. Add in other ingredients. Stir and cover. Stir occasionally. Cook for 20-25 minutes until sweet potatoes are tender.

This comforting Beef & Sweet Potato Chowder is full of flavor, low fat, and has healthy carbs from the sweet potatoes! Dairy-free, Gluten-free, THM-E.

Beef & Sweet Potato Chowder- MamaShire

Beef & Sweet Potato Chowder

Serves: 8-10 servings
Ingredients
  • 1-2 lbs lean ground beef, grass-fed or leanest you can find
  • 6-8 cups beef broth
  • 1 tablespoon coconut oil
  • 1 medium onion, chopped
  • 3 sweet potatoes, peeled and chopped
  • 2 bags frozen cauliflower, thawed slightly and chopped
  • 2 cups cashew or almond milk
  • 1 teaspoon Herbamare
  • pepper to taste
Instructions
  1. Take cauliflower out of freezer to begin thawing.
  2. Brown ground beef and then put in colander and run hot water over the beef to remove as much fat as you can. Let strain.
  3. In a large stockpot heat 1 tablespoon coconut oil until melted. Add onion to stockpot and cook until translucent. Add sweet potatoes, cauliflower, broth, and seasonings. Bring to a boil over medium high heat. Once boiling, back the heat down to medium and keep the soup at a low boil for 20 minutes. Add in strained beef and cashew milk. Lower heat and let simmer for 10 minutes more.
Notes
Cashew milk has more of a creamier texture than almond milk, but either will work fine in this recipe.

Beef roast with sweet potatoes is one of my favorite comfort foods. I wanted to put together a soup that had those same delicious flavors. This Beef & Sweet Potato Chowder turned out exactly like I hoped – warm and comforting.

Tips for making Beef & Sweet Potato Chowder:

  • Optional: Puree one of the bags of thawed cauliflower in a food processor and then add it to the soup. It will make the soup a little thicker.
  • I added a little bit of “Hello Cheese” from the Trim Healthy Mama Cookbook on top of my bowl and it gave it some extra yum. If you can eat regular cheese you could add a wedge of Light Laughing Cow cheese.
  • If you can make your own beef broth, it will make this soup extra good. Dr. Axe has an excellent post on the health benefits of bone broth.
  • I use Herbamare seasoning in my recipe. It’s an organic seasoning salt that has herbs and vegetables infused in the sea salt. It is our favorite, but feel free to use your favorite seasoned salt.

My girls and I went to a Gluten-Free Expo last month in Indianapolis and had such a good time trying all the samples of gluten-free foods. There was a lot of yummy food, but it wasn’t the type of gluten-free food that we normally eat. There was a lot of sugar. It’s not something I would want to do everyday, but once a year. Yeah.

One of the samples that we came home with was a little bag of sweet popcorn. Good thing it was a little bag, it would have been hard to stop. After looking at the ingredient list, I thought it would be quick and easy to duplicate, but make it sugar-free! So here it is – sugar-free sweet & salty popcorn!

Tips for making Sweet & Salty Popcorn:

  • Use an air popper to pop your popcorn.
  • Blend your choice of sweetener in a blender or coffee grinder to a powder consistency.
  • Use organic or Non-GMO popping corn if possible.
  • I use Spectrum Coconut Spray Oil. I have found that Walmart carries it at the lowest price.
  • For Trim Healthy Mamas, keep your serving size to 4 cups or under. This would be for an occasional E snack.
Sweet & Salty Popcorn

Ingredients
  • 16 cups organic popped corn
  • 3-4 tablespoon homemade sweetener*, powdered or sweetener of choice
  • 1½ teaspoons sea salt
  • Coconut spray oil
Instructions
  1. To make powdered homemade sweetener, blend the sweetener in a blender or coffee grinder until powdered.
  2. Put popped corn in large bowl or pan. Spray over the popcorn for about 3-5 seconds and then sprinkle on about 1 tablespoon of powdered sweetener and the sea salt. Stir with two large spoons. Spray over the popcorn again for about 3-5 seconds and sprinkle another tablespoon of sweetener over the popcorn. Stir and repeat. Taste to see if it is sweet enough. If not, repeat process. You may need to spray the popcorn 2-3 more times and stir to get all the popcorn sweetened.

*homemade sweetener - 1 cup erythritol + 1 teaspoon stevia mixed together.

The classic tastes of orange and cranberries come together in this lightened-up muffin that makes for a perfect breakfast or snack. Muffins have always been a favorite of mine. Easy to make and easy to eat. These muffins make me think of baked oatmeal in neat little packages.

They are gluten-free, dairy-free, and sugar-free. Use gluten-free oats to keep it gluten-free, if needed.

Oatmeal Orange Cranberry Muffins

Serves: 12
Ingredients
  • 2 cups gluten-free oats
  • 1 cup unsweetened applesauce
  • 3 egg whites or ½ cup egg whites
  • ½ cup erythritol
  • ½ teaspoons of Better Stevia
  • 2 teaspoons aluminum-free baking powder
  • 1 teaspoon orange extract
  • ½ teaspoon sea salt
  • 1 cup cranberries, coarsely chopped
Instructions
  1. Preheat oven to 375°. Grease 12-cup muffin pan.
  2. Put oats in a blender or food processor and blend until ground into flour.
  3. Mix all ingredients, except cranberries.
  4. Fold in cranberries.
  5. Fill muffin tins ¾ full and bake for 15-20 minutes or until a toothpick comes out clean.
  6. Cool muffins for 5 minutes and then remove to wire rack.
  7. These are best after they have cooled.
