One of my favorite sandwiches of all time is a BLT, especially when there are fresh tomatoes from the garden. This summer I’ve been enjoying a yummy gluten-free version of this classic sandwich with my favorite gluten-free bread.

I also enjoy the taste of a BLT in this lighter version of a BLT in salad form with a tangy mayo dressing.

This Fajita Frittata with Squash is a perfect summertime meal, full of flavor with spices and summer vegetables. With all the squash coming on fast in the garden and priced extra low at the grocery store right now, this is an economical and tasty dish to serve your family.

I added nutritional yeast in with the eggs to give it an extra yummy cheesy flavor, but it you don’t have any feel free to leave it out.

Crustless Spinach Quiche

Crustless Spinach Quiche Gluten & Dairy Free - MamaShire.com
Crustless Spinach Quiche Gluten & Dairy Free

The classic quiche made a whole new way! It’s based on a favorite recipe that we had that needed to be upgraded to be  gluten and dairy free. Easy way to get rid of the gluten is to loose the crust. Simple and easy to do. You won’t miss having a crust, but if you do you can add a gluten-free crust, but that means extra work. Next is to make it dairy free. I used coconut milk in the quiche and I topped one with a dairy-free homemade cheese and the other with a sheep cheese. They both turned out delicious.

Crustless Spinach Quiche Gluten & Dairy Free - MamaShire.com

The quiche on the left was made with the homemade dairy-free called Hello Cheese from the Trim Healthy Mama Cookbook. The quiche on the right was made with Pecorino Romano, a sheep cheese. Manchego sheep cheese would work well here, too.

Crustless Spinach Quiche Gluten & Dairy Free - MamaShire.com

The recipe makes enough for two quiches. I’ll make this for supper and then have the extra one to serve for breakfast or leftovers. Depending on the size of your family, you may not have any leftovers. They also freeze well.

Crustless Spinach Quiche Gluten & Dairy Free - MamaShire.com

Tips for making this quiche:

  • If you can have sheep or goat cheese, you could use either on the top of the quiche. I usually use Pecorino Romano or Manchego sheep cheese.
  • To be completely dairy free you can use a vegan cheese recipe. I used the recipe in the new Trim Healthy Mama Cookbook for the “Hello Cheese”. It’s quick and simple to make. There are a few special ingredients that I had to purchase to make the “Hello Cheese”, but they will last a long time and you will be able to a lot of “cheese” from them. Some of those special ingredients are agar powder, collagen, nutritional yeast, and toasted sesame oil.
  • If you don’t have the THM cookbook here are two recipes that I found online for vegan cheese that you could try. I have not made them, but they look easy to make. 15 minute Vegan Cheese and Homemade Vegan Cheese. If you are following Trim Healthy Mama these two recipes would have to be tweaked a little to make sure you were using on plan ingredients.
  • You can leave off the cheese completely and it will still be yummy.

If you are following Trim Healthy Mama this would be an S.

Some dear friends served us this spicy dish several years ago and it immediately became a family favorite. The original recipe called for mozzarella cheese and was served on naan bread. When we had to go gluten and dairy free we didn’t want to lose this wonderful dish, so I recreated it to fit our new way of eating.

Now I serve this yummy combination on our gluten-free almond bread and use sheep cheese. For a completely dairy-free version we also use the “Hello Cheese” from the new Trim Healthy Mama Cookbook, which is shown in the bottom photo. We also like to make up extra spicy mayo for dipping sauce.

This spicy dish is delicious and super easy to make! It takes one skillet and just a little over 30 minutes to prepare. If you already have pre-cut chicken and onions, it would be even faster.

I was able to get most of these ingredients at Walmart, so this is a budget friendly meal and it would be so easy to keep these ingredients on hand for a quick go to meal.

I love to use chipotle chili in recipes, it adds a nice spicy kick. I normally use Spice Island Chipotle Chili Powder, if you can’t find it or another brand locally this chipotle chili from Amazon would be great.

Recipe type: Soup
Serves: 8-10 servings
Ingredients
  • 1-2 lbs lean ground beef, grass-fed or leanest you can find
  • 6-8 cups beef broth
  • 1 tablespoon coconut oil
  • 1 medium onion, chopped
  • 3 sweet potatoes, peeled and chopped
  • 2 bags frozen cauliflower, thawed slightly and chopped
  • 2 cups cashew or almond milk
  • 1 teaspoon Herbamare
  • pepper to taste
Instructions
  1. Take cauliflower out of freezer to begin thawing.
  2. Brown ground beef and then put in colander and run hot water over the beef to remove as much fat as you can. Let strain.
  3. In a large stockpot heat 1 tablespoon coconut oil until melted. Add onion to stockpot and cook until translucent. Add sweet potatoes, cauliflower, broth, and seasonings. Bring to a boil over medium high heat. Once boiling, back the heat down to medium and keep the soup at a low boil for 20 minutes. Add in strained beef and cashew milk. Lower heat and let simmer for 10 minutes more.
Notes
Cashew milk has more of a creamier texture than almond milk, but either will work fine in this recipe.

Beef roast with sweet potatoes is one of my favorite comfort foods. I wanted to put together a soup that had those same delicious flavors. This Beef & Sweet Potato Chowder turned out exactly like I hoped – warm and comforting.

Tips for making Beef & Sweet Potato Chowder:

  • Optional: Puree one of the bags of thawed cauliflower in a food processor and then add it to the soup. It will make the soup a little thicker.
  • I added a little bit of “Hello Cheese” from the Trim Healthy Mama Cookbook on top of my bowl and it gave it some extra yum. If you can eat regular cheese you could add a wedge of Light Laughing Cow cheese.
  • If you can make your own beef broth, it will make this soup extra good. Dr. Axe has an excellent post on the health benefits of bone broth.
  • I use Herbamare seasoning in my recipe. It’s an organic seasoning salt that has herbs and vegetables infused in the sea salt. It is our favorite, but feel free to use your favorite seasoned salt.

Turkey Barbecue Meatballs (Gluten-Free, Dairy-Free, Sugar-Free) - THM-S - MamaShire.com

I’ve updated our favorite turkey barbecue meatball recipe to be grain free, dairy free, and sugar free. These meatballs are perfect for dinner or for appetizers.

Tips:

  • I use a small cookie scoop to make my meatballs. I just scoop and drop them on the baking pan. So they aren’t perfectly round and that’s okay with me, but if you want them a little more roundish, just pick up each meatball and roll it in your hands to shape.
  • These are easy to make ahead and freeze. I like having meatballs already to go for quick prep on a weeknight. Pull out how many meatballs you want to serve and adjust the sauce ingredients or leave as is to have extra sauce and then bake.

Easy Lasagna - Gluten-Free Dairy-Free Recipe by MamaShire

My dear friend, Carla, used to make an amazing lasagna that was legendary in our circles. Her recipe called for extra basil and it was so good. Since going gluten and dairy-free, I have missed that lasagna and I’ve had more than one little “sigh” thinking back on it.

When the new Trim Healthy Mama Cookbook came out this fall, I was happy to see that there were many dairy-free recipes in the book, but then I came across the Lazy Lasagna, which is not dairy-free. Oh, I wanted lasagna. Their recipe uses spinach in place of noodles and it got me to thinking, how can I make a lasagna like that, but dairy-free. I often use sheep cheese as a cow-dairy replacement, but I wanted something completely dairy-free. Then I remembered the white sauce that I make for my baked salmon and wondered if it could work as a dairy replacement in lasagna.

So I combined three different recipes to come up with this gluten-free, dairy-free delicious easy lasagna. I hope your family loves it as much as mine does. It’s good to have lasagna back in our lives!

Easy Lasagna - Gluten-Free Dairy-Free Recipe by MamaShire

Notes on a couple ingredients used in my Easy Lasagna:

  • This recipe uses glucomannan which is a natural thickener from the konjac plant and is a low-glycemic food. It only takes a little bit to thicken your recipes. This is an ingredient that you probably won’t find at a local store, but you will be able to find it on Amazon or at Trim Healthy Mama.
  • I also have nutritional yeast in this recipe. This gives the white sauce a nice cheesy flavor. You may not be able to find it locally either. I buy mine from Amazon. If you’d like further information on the health benefits of nutritional yeast, there’s a great article on Dr. Axe’s website.

Chicken Patties (Grain-Free & Dairy-Free)

Chicken-patties-Grain-Free - MamaShire.com

This recipe for chicken patties is one that I have used for years, but I’ve updated it to be grain-free, dairy-free, and on plan with Trim Healthy Mama. They are sure to be a hit with your family. Enjoy them with spicy mayo, ranch dip, marinara sauce, or in a sandwich, there are so many different ways to serve these patties. We like to make sandwiches with them on our favorite gluten-free bread.

You can double or triple this recipe and freeze the extras. They don’t take long to thaw, just heat them up in the oven or a skillet on the stove top for a super quick meal.

Chicken-Patties-Grain-Free - MamaShire.com

Here is a funny little story of my history with chicken patties. When I was first married I was a very bad cook. I would buy frozen chicken patties and fry them for my husband. The funny part is that I burned them every. single. time. And then I would serve them with the darkest side down, hoping he wouldn’t notice. Ha. He must have really loved me. Here’s a little lesson in frying anything – pay attention!

Chicken-Patties-Grain-Free - MamaShire.com

A food processor makes mincing the cooked chicken a breeze, but if you don’t have one you can shred and then mince your chicken using a cutting board and a chef’s knife.

Change up the flavor of the patties by adding in some cajun spice, a little more chili powder, or your family’s favorite seasonings.
