The strawberries in these scones make them so moist and delicious. These would be perfect for a lovely brunch or an afternoon tea break.

An easy way to form these scones is to drop them onto your parchment-lined baking sheet in eight large clumps a few inches apart and then form them into triangle shapes about 3/4″ tall. If you prefer your scones to be more uniform in shape you can form the dough into a large circle and cut into 8 pieces. I have step-by-step pictures of this on my Snickerdoodle Scone post.

Ingredients

  • 2 1/4 cup blanched almond flour
  • 1/4 cup coconut flour
  • 2 teaspoons aluminum-free baking powder
  • 1/2 teaspoon Himalayan salt
  • 1/3 cup Trim Healthy Mama Sweet Blend or 1/2 cup of homemade sweetener*
  • 2 eggs
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped strawberries, fresh or frozen. If using frozen, thaw slightly to chop

*homemade sweetener – mix together 1 cup of non-GMO erythritol + 1 teaspoon Now Better Stevia

Instructions

  1. Preheat oven to 350°. Line a large baking pan with parchment paper.
  2. Whisk the almond flour, coconut flour, baking powder, salt, and sweetener together in a large bowl.
  3. In a small bowl whisk the eggs, coconut oil, and vanilla. Add to the dry ingredients and mix thoroughly.
  4. Add in strawberries.
  5. Divide dough into eight large clumps on the baking pan several inches apart. Pat the dough into triangles or circles about 3/4″ inch tall.
  6. Bake for 22-25 minutes, until golden brown. Let set in pan for 5-10 minutes then remove to a wire rack to cool or eat while warm.

This is one of my family’s favorite Italian dishes. I like to have chicken and spaghetti squash already pre-made so that I can easily put a dish like this together.

To make this dairy free, I use coconut milk. Mixed with all the spices and other ingredients it makes a delicious creamy sauce. If you don’t like coconut milk, don’t worry, because once this sauce is all mixed and baked you won’t taste the coconut flavor.

Ingredients

  • 1 cooked spaghetti squash
  • 3 cups cooked chicken, chopped
  • 1 16 oz bag of frozen broccoli, cooked and chopped
  • 1 15 oz can coconut milk
  • 1/2 cup of nutritional yeast
  • 4 teaspoons basil
  • 4 teaspoons oregano
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon gluten-free hot sauce (I use Frank’s Hot Sauce)
  • 1 teaspoon Himalayan salt

Instructions

  1. Preheat oven to 350°.
  2. Mix all ingredients together in a large bowl. Put mixture in a 9×13 casserole dish.
  3. Bake for 40 minutes.

I remember the first time I tried a spaghetti squash I was perplexed at how hard it was and really didn’t know how to cut it open. So I pulled out my big butcher knife and called my husband into the kitchen and asked him to take care of it. He did and then I baked it up and we had the first of many wonderful meals featuring spaghetti squash. As time went on I realized I needed to be able to cut that hard spaghetti squash myself and so I searched for the best way to cut one and this method is now my go to way to cut it open. It’s actually super easy and we never really needed that big ole’ knife after all.

How to Cut and Cook a Spaghetti Squash

All you need is a small paring knife. My absolute favorite paring knife is by Rada. And while I’m at it the tomato knife by Rada is the bomb. You can use it on so many other things besides tomatoes. I wouldn’t want to be without my Rada knives in my kitchen. Okay, back to the cutting the squash. Hold onto one end of the spaghetti squash, keeping your fingers far from the cutting area.

Take the paring knife and insert just the tip. Do not push the knife in very far as it will get stuck from the pressure of the shell. So put just the tip in and then pull up and make another little cut.

Make your way all the way around the spaghetti squash until you connect with your first cut.

You may need to go around the squash with your paring knife one more time making the cut just a little bit deeper. This will not take hardly any time at all to do.

Use a spoon to scoop out the seeds. I also use my knife to clean up the stringy seeded area a little more thorough.

When I bake them I like to spritz the squash with some avocado or olive oil, you could also use a coconut cooking spray. It’s not necessary to spritz them if you will be cooking them in the Instant Pot.

I often make two or three spaghetti squash at a time and keep the cooked spaghetti strands in my refrigerator for a quick meal. It also freezes well, so I may put half of it in a freezer bag and freeze for another day.

I bake it in the oven at 350° for 60 to 70 minutes until nice and fork tender. I like to have my spaghetti squash soft so if you would prefer to have a crunchy bite just bake it for a little less.

Two spaghetti squash will make about 8 cups of cooked squash.

I use spaghetti squash in any recipe that calls for pasta. It’s the perfect gluten-free low-carb solution to enjoying pasta dishes.

Nutrtional value: 1 cup has 42 calories, 0 fat, 10 grams of carbs, 2 grams dietary fiber, 1 gram protein.

Ingredients

  • spaghetti squash

Instructions

  1. Using a paring knife, cut around the middle of the squash making very small cuts with a paring knife. Continue cutting around the middle until you reach your original cut. Go back over the cutting line with your paring knife making your cuts a little deeper. Go all the way around again. The squash should come apart. Scoop out seeds.

Baking in oven for one or more spaghetti squash

  1. Spritz the cut side of the spaghetti squash with avocado, olive, or coconut oil. Sprinkle with salt and place cut side down in baking pan.
  2. Bake at 350° for 60-75 minutes until fork tender.
  3. Allow the squash to cool before removing the strands of spaghetti with a fork.

Cooking in Instant Pot for one spaghetti squash

  1. Place the rack in the bottom of the pot and add 1 cup water. Place the two halves of the squash in the pot. You may need to place on up and one down to fit. Close lid and make sure steam vent is closed.
  2. Press Manual mode and set at 10 minutes for pressure.
  3. When pressure is finished and it switches to warm mode (with the L for low in front of the numbers) turn it off and carefully open the steam vent.
  4. When all the pressure is released you can open the pot and remove the squash.
  5. Allow the squash to cool before removing the strands of spaghetti with a fork.

  1. Put lemon juice, almond milk, collagen, stevia, salt, and vanilla in blender. Turn on low for just a few seconds to mix. While blender is on low, slowly add in glucomannan. Blend on low for 30 seconds and turn off. Add in blackberries and ice cubes, blend on high until completely blended.

Notes

Depending on the sweetness of your blackberries, you may need to add a bit more sweetener.

I think one of my favorite things to bake has to be muffins. Muffins are so easy to make and just plain fun to eat. And I love their look and texture. They great for breakfast or a quick snack. These would look really pretty with a special brunch as well.

These muffins have one cup of chopped strawberries and it makes for a very moist muffin if you prefer a drier muffin you can lower the amount of strawberries to 3/4 cup.

To sweeten these muffins you can use the Trim Healthy Mama Super Sweet Blend or my homemade version of that which is a mixture of 1 cup of Now Foods non-GMO Erythritol and 1 teaspoon of Now Foods Better Stevia. Our family likes this brand of stevia the best of all the ones that we have tried. I usually buy the 1 lb. container and it lasts for several months.

Ingredients

  • 2 cups blanched almond flour
  • 1/4 cup coconut flour
  • 1/2 cup THM Super Sweet Blend or *homemade sweetener
  • 1 teaspoon aluminum-free baking powder
  • 1/2 teaspoon Himalayan salt
  • 6 eggs
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, fresh or frozen, chopped

Instructions

  1. Preheat oven to 375°. Grease a 12 cup muffin pan with cooking spray or line with paper cups.
  2. Using a whisk combine the almond flour, coconut flour, sweetener, baking powder and salt in a medium mixing bowl. In a large mixing bowl, whisk the eggs, coconut oil, and vanilla extract. Blend the flour mixture into the egg mixture and mix thoroughly. Gently add in the strawberries.
  3. Fill muffin cups ¾ full.
  4. Bake muffins for 18-20 minutes, or until a toothpick stuck in the muffins comes out clean. Let muffins cool in pan for 5 minutes and then remove to a wire rack. Serve warm or room temperature.

We recently went to Outback Steakhouse to celebrate my sister’s college graduation and my brother-in-law ordered a plate of bloomin’ onions. Oh, they looked so good, but they are not on their gluten-free menu so I tried not to look at them too much. Plus, I had recently bought an air fryer and knew that I could enjoy some home-made onions that were not only gluten free but also low in fat and carbs and would be on plan with Trim Healthy Mama.

Using an air fryer is so easy and I have decided it is a must have item in my kitchen. It allows me to have crispy fried treats like these onion rings without using all the oil that you normally would need to use to get them crispy like this.

There are so many air fryers to pick from on Amazon so I decided to go with the top rated one that was within my budget. This one is an Avalon Bay Air Fryer. It is super easy to use and the clean up is a breeze. It doesn’t get hot to the touch either. There is a vent on the back side that blows out hot air, but it isn’t enough to heat your kitchen up like an oven does.

You need to use an oil sprayer. I originally used my Spectrum coconut oil spray, but I wanted to be able to use avocado or olive oil for the flavor so I ordered a set of these Evo Oil Sprayers. I had a refillable oil mister several years ago, but I wasn’t impressed with how it worked, but these sprayers work great.

Air Fried Gluten Free Onion Rings

I’ve been making several recipes in my air fryer and I’ll be sharing them all soon. One fun thing we did with the air fryer was to take it with us when we went to the Gospel Coalition Conference this spring. It was easy to travel with and we were able to heat up our breakfast and supper in the hotel room super quick and easy. Did I mention it’s easy to clean? It is.

Air Fried Gluten Free Onion Rings

Air Fryer Gluten Free Onion Rings

Delicious and easy to make onion rings.

Ingredients

  • 2 eggs
  • 1/2 cup unsweetened almond or cashew milk
  • 1 1/4 cup of Trim Healthy Mama Baking Blend
  • 1/2 Himalayan salt
  • 1/2 teaspoon paprika (optional)
  • 1/8 teaspoon cayenne
  • 1 large sweet onion

Instructions

  1. Mix eggs and milk together in a shallow bowl that is easy to dip your rings into. Mix flour blend, salt, paprika, cayenne together in a shallow bowl that is easy to dip your rings into. Slice onion in 1/4 to 1/2 inch rings and separate rings.
  2. Preheat air fryer on 350° for a minute or two.
  3. Dip onion slices in egg mixture and then dredge through flour mixture. Place onion slices in air fryer basket in a single layer, can be slightly overlapped. Lightly spray with oil spray. Fry in air fryer for 5-8 minutes, turn onion slices over, lightly spray and fry for another 5-8. Frying time will depend on the thickness of the onions and how many rings are in the fryer at one time.
  4. It may take 3-4 batches to fry all the onion rings.
  5. You can easily check on the onion rings during the frying to check for doneness.

Notes

If you need a grain-free baking blend you can use equal parts of blanched almond flour, golden flax meal, and coconut flour. It may tip the scale a bit on the fat amount so using this baking blend may put these onion rings in an S category.

I started making frosty drinks when I first started following Trim Healthy Mama a few years ago. Never to leave a recipe alone, I started dabbling around with different flavor combinations and I was hooked. These drinks are so refreshing and so good for you.

I’ve been creating several different flavors and whichever one I’m drinking is my favorite. I’ve included a list at the bottom of the post with some of my other drinks.

A few years ago some dear friends gave us some of their extra red raspberry bushes. At the time I wasn’t thrilled about the idea because I had grown up enjoying my grandmother’s black raspberry pie that she made from the wild black raspberry bushes that were in our woods. I thought they were the only “good” raspberry. While I still think black raspberries are amazing, I have come to appreciate these red beauties more and more. They’re incredibly low in carbs like most all berries, and they’re so healthy for you.

This recipe makes one-quart serving, but if it’s too big you can share half of it with a loved one. If you decide to divide the recipe and share it, I suggest you double the amount of collagen so that there is a good serving of collagen in both drinks.

For you Trim Healthy Mamas, this Frosted Raspberry Lemonade is an FP and is best enjoyed within the first 30-45 minutes of making.

Frosted Raspberry Lemonade

Frosted Raspberry Lemonade - Delicious and refreshing! Dairy-free, sugar-free, low-carb, gluten-free! THM-FP

Ingredients

  • 2/3 cup almond or cashew milk
  • 1/4 cup lemon juice
  • 1 tablespoon collagen peptides
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Now Better Stevia or 2 “doonks of THM Stevia
  • 2 pinches sea salt
  • 1/2 teaspoon glucomannan
  • 1/2 cup fresh or frozen raspberries
  • 3 cups ice cubes (around one full tray)

Instructions

  1. Put almond milk, lemon juice, collagen, vanilla extract, stevia, sea salt, and vanilla in blender. Turn on low for just a few seconds to mix. While blender is on low, slowly add in glucomannan. Blend on low for 30 seconds and turn off. Add in raspberries and ice cubes, blend on high until completely blended.

Two Things to be Intentional about in January

Instead of thinking about New Year’s resolutions, I’m going to be focusing on just a couple of things to work on this month!

So, hello January!

Here are two things that I am going to be very intentional about this month to help get myself back on track and hopefully, the benefits will spill over into the rest of the year!

  • Work through Crystal Paine’s new “15 Days to a Healthier You Program” that starts on January 9th. This very affordable membership is open through January 3 (midnight CST).  This program covers several different areas that I am needing to work on! It comes with a downloadable study guide and a private Facebook group where Crystal will share 15-minute live videos each evening going over each days topic. The video will start on January 9th. If you miss a live video it will be saved for easy viewing later. This program is available for only $15.

  • Menu Planning! This is something that I struggle with and I’ve decided that I’m tired of it. Tired of the struggle, so there is only one thing to do and that is change! Jennifer at Working at Homeschool sent me a copy of her ebook “365: One year of Healthy Meal Plans for Busy Families” and it looks amazing. It’s also gluten-free so that’s a win-win in my book! She also offers free monthly menu plans on her blog as well.

I’ve had my Cuisinart Food Processor for 6 years now and I just love it. It makes food prep so quick and easy. I think it’s one of my favorite and most important tools in my kitchen. I’ve had other brands of food processors before that just didn’t hold up well, so when I purchased my Cuisinart I was hoping it would work well AND last. I’ve not been disappointed in it at all.

It can shred, slice, chop, or mix just about what ever type of food you’re working with. I can use it to shred a head of cabbage in just a couple of minutes to make sauerkraut or coleslaw, it can quickly shred zucchini or yellow squash so I can make my Chocolate Peanut Butter Muffins or Yellow Squash Snack Cake. I can shred carrots, chop pecans, and then use it to mix the batter for my favorite Carrot Cake. It helps make all the prep work easy for making Homemade Chicken Noodle Soup. Can you tell this gets a lot of use in my kitchen?

*Update* – There was a recent recall on older Cuisinart Food Processor chopping blades. This model is is not on the recall list. I actually do have one of the older chopping blades that has been recalled. I’ve never had any trouble with it, but I will be returning it to get the newer one.
