Frosted Mocha - Dairy-free, Sugar-free, Low-Carb, THM-FP

This Frosted Mocha is a delicious and satisfying drink. Perfect for a snack between meals or for a big dessert.

Tips for making Frosted Mocha:

  • Keep an eye on the carbs in your cocoa powder, some of them contain more carbs than others. I use raw cacao powder when I can for an added healthy benefit, but it isn’t necessary to enjoy this delightful drink.
  • The added collagen in this drink gives you a good amount of protein to help make this a more satisfying snack. THM Integral Collagen or Custom Collagen works well in this recipe. It’s also great for your skin and joints.
  • The glucomannan helps give this drink a creamy texture. Either THM Glucomannan or Now Glucomannan would work well.
  • This drink is best enjoyed within a half-hour of making.
  • I do use a Vitamix blender and so I have a tamper that I use to push down the ice while it’s blending. If you are using a different type of blender you may need to stop the blender occasionally and use a large spoon or rubber spatula to push down the ice.

Serves: 1 quart
Ingredients
  • ½ cup brewed coffee
  • ½ cup unsweetened almond milk
  • 2 tablespoons collagen
  • 1½ tablespoons cocoa powder or raw cocoa, if possible
  • ½ teaspoon Better Stevia or 2 "doonks" of Trim Healthy Mama Stevia
  • 1 teaspoon vanilla
  • 2 pinches Himalayan or sea salt
  • ½ teaspoon glucomannan
  • 3 cups ice cubes
Instructions
  1. Place coffee, almond milk, collagen, cocoa, stevia, vanilla, and salt in blender and blend on low. Continue blending on low and slowly add in ½ teaspoon of glucomannan. Blend for an additional 30 seconds.
  2. Stop blender and add in ice cubes and blend until smooth and creamy.
  3. This is best enjoyed within a half hour of making.

These Coconut Strawberry Chia Muffins are some seriously, yummy muffins and to top it off the smell of strawberries baking is so good! While they were baking, both of my daughters came out of their art studio at different times to see what I had in the oven. I love it when that happens. Oh, I’m just in the kitchen baking up some delicious healthy food for you.

When you make these, you can enjoy the fact that they are chock-full of healthy superfoods – chia seeds, coconut flour, coconut oil, coconut milk. And if you are able, use organic strawberries and free-range eggs and you’ll be over the top.

If you are following Trim Healthy Mama, like I am, these are an “S”.

Coconut Strawberry Chia Muffins

Ingredients
  • 1 cup coconut flour
  • ¼ cup chia seeds
  • ¾ cup erythritol
  • ¾ teaspoon Now Better Stevia
  • 1 teaspoon baking soda or grain-free baking powder, either will work here.
  • ½ teaspoon Himalayan or sea salt
  • 1 cup coconut milk
  • 6 eggs
  • ¼ cup coconut oil, melted
  • 4 teaspoons vanilla extract
  • 1 cup chopped strawberries, fresh or frozen
Instructions
  1. Preheat oven to 350°. Grease muffin tin or line with paper liners.
  2. Mix coconut flour, chia seeds, erythritol, stevia, baking powder, and salt in a bowl.
  3. In a large bowl whisk by hand or use a mixer the coconut milk, eggs, coconut oil, and vanilla extract.
  4. Add flour mixture into egg mixture and mix until combined.
  5. Fold strawberries into batter.
  6. Fill muffin cups ¾ full and bake for 25 to 30 minutes until golden brown and center is set.
  7. Let set in pan on rack for 5 minutes before removing, then let cool on wire rack.
Notes
These muffins are a little on the sweet side. If you like less sweet, just back off a little on the erythritol and stevia or just leave out the stevia.

I like to use different flours when I’m baking to keep a variety in our diet. That’s why you’ll see my recipes sometimes call for almond flour, flax meal, coconut flour, sprouted gluten-free flours, or my baking blend.

These grain-free salmon patties have been a hit in my home. I like to serve them with roasted or steamed vegetables. When we are having a busy week, I like to have these made ahead of time for a quick, nutritious meal. They are also good for a freezer cooking session. Freeze the patties in a thick freezer bag or container so the salmon smell doesn’t transfer onto your other foods.

Be sure to buy wild-caught salmon. It’s full of omega-3, vitamins and minerals. The healthy omega-3 fats help protect against cancer and osteoporosis. It improves your skin, brain function, heart health among many others. You can read more about the nutritional benefits of salmon at Dr. Axe’s website.

I add some of my favorite seasonings in these salmon patties; Herbamare and nutritional yeast. If you don’t have those feel free to leave them out or use your favorite seasonings. The Herbamare is an organic seasoning salt that has sea salt and organic herbs. The nutritional yeast adds a slight cheesy flavor.

Ingredients
  • 2 14.5 oz cans wild-caught salmon
  • 3 eggs
  • ½ cup fflax meal
  • ½ cup finely chopped onion
  • 2 tablespoons nutritional yeast
  • ½ teaspoon of Herbamare or another seasoned salt
  • 2 tablespoon coconut oil
Instructions
  1. Drain liquid from salmon. Put salmon in large bowl and break apart and mash with a fork.
  2. Add all other ingredients and mix well.
  3. Shape into patties and fry in large skillet with coconut oil over medium heat.
  4. Fry 3-5 minutes on each side, until golden brown.

I use almond milk nearly everyday and there are times when I run out, but can’t get to the store right away to get more.  I recently saw a recipe for tahini milk made with water and tahini and thought that it should work with almond butter, too. I usually have almond butter in the fridge or pantry, so this is my new way to make homemade almond milk. It’s incredibly easy to make and doesn’t require any straining or nut bags like you need when making almond milk from almonds.

Just water and sugar-free almond butter and you are all set to make the easiest homemade almond milk. I usually buy Costco’s Kirkland brand sugar-free almond butter or Zinke Orchards.  I’ve listed a few more ingredients in the recipe, like sunflower lecithin, xanthan gum, stevia, or salt, but you can leave those out if you don’t have them on hand. They do add to the overall texture and taste of the almond milk, though.

I’ll probably still buy almond milk, but when I run out or just want to cut back on groceries, I’ll be making it this easy way.

  1. Put water in blender first and then add all the other ingredients. Blend for 1 minute.
  2. Store in glass jar in refrigerator. Shake before using.
Notes
You can make almond milk using only the water and almond butter, but the other ingredients help give it a better texture and taste.

This recipe for Baked Cajun Chicken Strips is one of our favorite ways to make chicken. These are great for supper or lunch. They are also one of our favorite picnic dishes. I love to have these made up ahead of time and be able to grab them for a picnic or for some road trip food.

Use my Homemade Cajun Spice Mix for a gluten-free, dairy-free, and sugar-free dish. Many store bought spice mixes contain ingredients that are not necessary or are allergens.

I use mayonnaise on the chicken strips to help them stay moist and tender. If you prefer, you can make your own mayonnaise from this recipe from Deep Roots at Home.

Instructions
  1. Preheat oven to 350°. Spray a large baking pan with coconut spray.
  2. Place chicken strips in baking pan and baste with half of the mayonnaise. Sprinkle 1 to 1½ tablespoons of Cajun Spice Mix over chicken.
  3. Bake for 15 minutes.
  4. Turn chicken strips over and baste with remaining mayonnaise and sprinkle with remaining or desired amount of Cajun Spice Mix.
  5. Bake for another 15 minutes.

Homemade Cajun Spice Mix

One of our favorite chicken recipes is Baked Cajun Chicken Strips. They are easy to make and not only are they great for supper, but they are one of our favorite picnic foods. This Homemade Cajun Spice Mix will give you the spicy flavor you need for any recipe that calls for a Cajun seasoning mix.

Many store bought spice mixes have ingredients that say “spices” that include things that we may not want to be eating, like msg, or they have wheat or whey (dairy) in them. With that in mind, I love being able to make my own spice mixes. I can control the ingredients and how much of them go into the mix. This is especially important if you have dietary restrictions.

Cajun Spice Mix

  • 1 tablespoon Himalayan salt
  • 1½ tablespoon cayenne
  • 2½ tablespoon paprika
  • 2 tablespoon garlic powder
  • 1 tablespoon onion powder

  • 1 tablespoon black pepper
Instructions
  1. Mix all ingredients and store in a jar.

This carrot cake is so delicious and moist your family and friends will be surprised that it’s gluten free! It’s the perfect cake or cupcakes for your Easter celebration or anytime. It’s one of our favorites!

Vanilla Frosting - MamaShire

I use this Dairy-Free Vanilla Frosting on my carrot cake. If you don’t have to be dairy-free than use your favorite cream cheese frosting.

I use a food processor to make quick work of this cake. One of my most used kitchen appliances is my Cuisinart Food Processor. I’ve had several less expensive models over the years that couldn’t keep up, but this one is built to last and work hard and I work it hard. It’s on my list of must haves in the kitchen.
I’m sharing a different version of this recipe on Raising Homemakers using coconut sugar and maple syrup.

Carrot Cake - Gluten, Dairy, and Sugar Free

Serves: 12 servings
Ingredients
  • 3 cups of finely shredded carrots, about 9-10 medium carrots
  • ½ cup of pecans, chopped fine
  • 5 large eggs
  • 3 cups blanched almond flour
  • 1 cup homemade sweetener* or Trim Healthy Mama Gentle Sweet
  • 1½ teaspoons aluminum-free baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¼ teaspoon nutmeg
Instructions
  1. Preheat oven to 350°.
  2. Prepare pans: for two 9" or 8" round cake pans, line with parchment paper, for 9 x13 cake pan or cupcake pans spray with coconut spray
  3. Using a food processor or electric mixer blend the eggs.
  4. Add in almond flour, sweetener, baking powder, cinnamon, ginger, and nutmeg. Mix well.
  5. Add in carrots and pecans mix until well combined.
  6. Pour into prepared pans.
  7. Bake "cake pans" around 25-30 minutes. Bake "cupcakes" 20-25 minutes. Check center with toothpick or cake tester for doneness.
  8. Let cool completely before adding frosting.

*Homemade sweetener - 1 cup of erythritol+ 1 teaspoon of Now Brand Stevia

Recently our family stopped at a Chick-Fil-A and we were given a free Frosted Lemonade because they had accidentally made an extra one. Funny thing was we couldn’t eat it because of –you guessed it– the dairy. So, when I came across a copycat recipe on Pinterest, I decided to make one that’s dairy and sugar-free.

I have no idea how close it is to the original, but I think it’s yummy, creamy and refreshing! I love using metal straws with my drinks it makes the drinks extra special!

For you Trim Healthy Mamas, this drink is an FP.

Instructions
  1. Put lemon juice, almond milk, collagen, stevia, salt, and vanilla in blender. Turn on low for just a few seconds to mix. While blender is on low, slowly add in glucomannan. Blend on low for 30 seconds and turn off. Add in ice cubes and blend on high until ice cubes have been completely blended.

Some dear friends served us this spicy dish several years ago and it immediately became a family favorite. The original recipe called for mozzarella cheese and was served on naan bread. When we had to go gluten and dairy free we didn’t want to lose this wonderful dish, so I recreated it to fit our new way of eating.

Now I serve this yummy combination on our gluten-free almond bread and use sheep cheese. For a completely dairy-free version we also use the “Hello Cheese” from the new Trim Healthy Mama Cookbook, which is shown in the bottom photo. We also like to make up extra spicy mayo for dipping sauce.

Trim Healthy Mamas this is an S. You can use a different type of flatbread for this pizza. If you are following Trim Healthy Mama you would want any alternative bread to be an FP or  S.

Chipotle Chicken Pizza Squares

Serves: 16 squares
Ingredients
  • 1 tablespoon coconut oil
  • 2 cups shredded or finely chopped cooked chicken
  • 1 teaspoon Italian seasoning
  • 1 package uncured bacon, cooked and crumbled
  • gluten-free almond bread
  • 1-2 cups manchego or pecorina romano, sheep cheese, shredded
  • or 1-2 cups Hello Cheese, shredded
  • 1 cup mayo
  • ground chipotle powder, start with ½ teaspoon and add additional to taste.
Instructions
  1. Melt coconut oil in large skillet. Add chopped chicken and Italian seasoning. Stir fry for a few minutes to set the spices. Set aside.
  2. Using a large sheet pan, lay out 16 slices of the gluten-free almond bread and lightly toast both sides by broiling each side for amount a minute each. Watch closely while broiling so they don't burn. Set aside to cool.
  3. Mix together the mayo and ½ teaspoon of ground chipotle powder. If you want the mayo to be spicier add about ¼ to ½ teaspoon of chipotle powder at a time, stirring, and then taste-testing to get it to your desired spiciness. I usually go by the color. We like ours a medium orange color. 🙂
  4. Spread spicy mayo on the slices of bread.
  5. Sprinkle each piece with Italian spiced chicken, crumbled bacon and cheese of your choice.
  6. Put in 350° oven and bake for about 5-10 minutes until heated through and sheep cheese melts. If using "Hello Cheese" or other vegan cheese don't look for melting.
Notes
Make extra spicy mayo for dipping sauce.

MamaShire’s Gluten-Free Baking Blend

This is my Gluten-Free Baking Blend that I have been using for several of the recipes in the new Trim Healthy Mama Cookbook.

The THM Baking Blend is featured in many of recipes throughout the new THM Cookbook. While I really like the THM Baking Blend, I wanted to have my own blend that I could tweak and that might be a little less expensive.

My baking blend is not the same as the THM Baking Blend, but it is similar. I like being able to have a big batch made up and ready to go. I’m much more likely to bake something yummy for my family if I have the blend all ready to go.

My blend doesn’t contain almond flour like the THM Baking Blend does, because I already use almond flour in a lot of my recipes and I wanted to have an alternative so that we’re not “always” eating almonds. Seriously, we eat this gluten-free bread  made with almond flour several times a week. Plus, this keeps the cost of the blend down. Win, win.

MamaShire's Gluten-Free Baking Blend

I have listed all the ingredients below and where I like to purchase them from. You may be able to find coconut flour and golden flaxmeal locally, but the other items will probably have to be ordered online. The initial purchase of these items will add up, but you will be able to get quite a bit of baking blend from them.

Trim Healthy Mamas this flour blend is an FP, but depending on what you bake with it that could change to an S or an E.
This is a very thirsty flour blend, so it you are creating your own recipe be sure to add enough liquids to keep it happy.

MamaShire's Baking Blend
 
Gluten-free baking blend that is low in calories, carbs, and fat. Easy to use in Trim Healthy Mama recipes.

  • 1 cup THM Gluten-Free Oat Fiber
  • ½ cup coconut flour
  • 8 tablespoons golden flaxmeal
  • 5 tablespoons collagen
  • 1 tablespoon glucomannan
Instructions
  1. Whisk together all the ingredients and store in an airtight jar.
  2. You can multiply this recipe to make a large batch.
