Some dear friends served us this spicy dish several years ago and it immediately became a family favorite. The original recipe called for mozzarella cheese and was served on naan bread. When we had to go gluten and dairy free we didn’t want to lose this wonderful dish, so I recreated it to fit our new way of eating.

Now I serve this yummy combination on our gluten-free almond bread and use sheep cheese.

For a completely dairy-free version we also use the “Hello Cheese” from the new Trim Healthy Mama Cookbook, which is shown below. We also like to make up extra spicy mayo for dipping sauce.

Ingredients

  • 1 tablespoon coconut oil
  • 2 cups shredded or finely chopped cooked chicken
  • 1 teaspoon Italian seasoning
  • 1 package uncured bacon, cooked and crumbled
  • gluten-free almond bread
  • 1-2 cups manchego or pecorina romano, sheep cheese, shredded
  • or 1-2 cups Hello Cheese, shredded
  • 1 cup mayo
  • ground chipotle powder, start with 1/2 teaspoon and add additional to taste.

Instructions

  1. Melt coconut oil in large skillet. Add chopped chicken and Italian seasoning. Stir fry for a few minutes to set the spices. Set aside.
  2. Using a large sheet pan, lay out 16 slices of the gluten-free almond bread and lightly toast both sides by broiling each side for amount a minute each. Watch closely while broiling so they don’t burn. Set aside to cool.
  3. Mix together the mayo and 1/2 teaspoon of ground chipotle powder. If you want the mayo to be spicier add about 1/4 to 1/2 teaspoon of chipotle powder at a time, stirring, and then taste-testing to get it to your desired spiciness. I usually go by the color. We like ours a medium orange color. 🙂
  4. Spread spicy mayo on the slices of bread.
  5. Sprinkle each piece with Italian spiced chicken, crumbled bacon and cheese of your choice.
  6. Put in 350° oven and bake for about 5-10 minutes until heated through and sheep cheese melts. If using “Hello Cheese” or other vegan cheese don’t look for melting.

Make extra spicy mayo for dipping sauce.

This spicy dish is delicious and super easy to make! It takes one skillet and just a little over 30 minutes to prepare. If you already have pre-cut chicken and onions, it would be even faster.

I was able to get most of these ingredients at Walmart and it would be so easy to keep these ingredients on hand for a quick go to meal.

I love to use chipotle chili powder in recipes, it adds a fun spicy kick. I normally use Spice Island Chipotle Chili Powder, if you can’t find it or another brand locally this chipotle chili from Amazon would be great.

Ingredients

  • 1 tablespoon coconut oil
  • 2 chicken breasts, cubed
  • 2 10 oz. bags frozen diced sweet potatoes
  • 1 10 oz. bag of frozen spinach
  • 1 cup of frozen diced green pepper
  • 1/2 cup chopped onion
  • 1 15 oz can of kidney beans, drained
  • 1/2 teaspoon ground chipotle chili
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • mineral salt and pepper to taste

Instructions

  1. Heat coconut oil in large skillet over medium heat until melted. Add cubed chicken and stir fry for a couple of minutes. Add in other ingredients. Stir and cover. Stir occasionally. Cook for 20-25 minutes until sweet potatoes are tender.

I’ve updated our favorite turkey barbecue meatball recipe to be grain free, dairy free, and sugar free. These meatballs are perfect for dinner or for appetizers.

Tips:

  • I use a small cookie scoop to make my meatballs. I just scoop and drop them on the baking pan. So they aren’t perfectly round and that’s okay with me, but if you want them a little more roundish, just pick up each meatball and roll it in your hands to shape.
  • These are easy to make ahead and freeze. I like having meatballs already to go for quick prep on a weeknight. Pull out how many meatballs you want to serve and adjust the sauce ingredients or leave as is to have extra sauce and then bake.

Ingredients

Meatballs

  • 3 pounds ground turkey
  • 1 1/2 cups coconut milk or non-dairy milk of choice
  • 1 1/2 cups golden flax meal
  • 3 eggs
  • 1/2 cup chopped onion
  • 2 teaspoons sea salt
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper

Sauce:

  • 2 6 oz. cans tomato paste
  • 1 cup water
  • 4 tablespoons apple cider vinegar
  • 2/3 cup homemade sweetener* or sweetener of choice
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 2 teaspoons sea salt
  • 1/2-1 teaspoon liquid smoke

Instructions

  1. To make meatballs, combine all ingredients in a large mixing bowl. Shape into walnut-size balls. Place meatballs in a single layer in 2 large baking pans.
  2. Preheat oven to 350°.
  3. In a medium bowl mix all the sauce ingredients together. Spoon sauce over meatballs. Bake for 1 hour.

Notes

*homemade sweetener – 1 cup erythritol+ 1 teaspoon stevia mixed together.

*Note for freezing. If ground turkey has not been previously frozen, the meatballs can be frozen before baking. Freeze on a large parchment lined baking sheet. Store frozen meatballs in freezer bags. When ready to bake, place frozen meatballs on baking sheet and spoon sauce over meatballs. Bake at 350° for 1 hour.

If ground turkey has previously been frozen, bake the meatballs without sauce and then freeze. When ready to bake place frozen meatballs on baking sheet and spoon sauce over meatballs. Bake at 350° for around 30 minutes or until heated through.

My dear friend, Carla, used to make an amazing lasagna that was legendary in our circles. Her recipe called for extra basil and it was so good. Since going gluten and dairy-free, I have missed that lasagna and I’ve had more than one little “sigh” thinking back on it.

When the new Trim Healthy Mama Cookbook came out this fall, I was happy to see that there were many dairy-free recipes in the book, but then I came across the Lazy Lasagna, which is not dairy-free. Oh, I wanted lasagna. Their recipe uses spinach in place of noodles and it got me to thinking, how can I make a lasagna like that, but dairy-free. I often use sheep cheese as a cow-dairy replacement, but I wanted something completely dairy-free. Then I remembered the white sauce that I make for my baked salmon and wondered if it could work as a dairy replacement in lasagna.

So I combined three different recipes to come up with this gluten-free, dairy-free delicious easy lasagna. I hope your family loves it as much as mine does. It’s good to have lasagna back in our lives!

 

Notes on a couple ingredients used in my Easy Lasagna:

  • This recipe uses glucomannan which is a natural thickener from the konjac plant and is a low-glycemic food. It only takes a little bit to thicken your recipes. This is an ingredient that you probably won’t find at a local store, but you will be able to find it on Amazon or at Trim Healthy Mama.
  • I also have nutritional yeast in this recipe. This gives the white sauce a nice cheesy flavor. You may not be able to find it locally either. I buy mine from Amazon. If you’d like further information on the health benefits of nutritional yeast, there’s a great article on Dr. Axe’s website.

Super easy to make lasagna that is gluten-free, dairy-free, and low-carb. If you don’t use a microwave be sure to start your spinach thawing early in the day.

Ingredients

  • 2 10 oz. blocks of frozen spinach, thawed
  • 2 lbs ground beef or turkey
  • 1 small onion, chopped
  • 2 1/2 tablespoons basil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • salt & pepper to taste
  • 1 26 oz. jar of spaghetti sauce, sugar-free
  • 1 cup mayo
  • 1 14 oz can coconut milk
  • 2 eggs
  • 5 tablespoons nutritional yeast
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon glucomannan

Instructions

  1. Brown you ground beef or turkey in large skillet. When your meat is almost finished browning add in the onion, basil, oregano, garlic powder, and salt and pepper to taste. Continue cooking until the onions are translucent and your kitchen in smelling amazing. Mix in the jar of spaghetti sauce.
  2. While your meat is cooking, whisk together in a medium bowl the mayo, coconut milk, 2 eggs, nutritional yeast, onion powder, cayenne, and sea salt. After everything is mixed well sprinkle the glucomannan over the mixture and then whisk it in. Let set while you drain your spinach.
  3. Drain your spinach in a colander lined with a cheese cloth or a wire mesh colander. You can use wax paper or saran wrap to cover the spinach and then push on the wax paper to keep your hands from getting spinach on them.
  4. Preheat oven to 350°.
  5. Spread one half of the meat sauce in a 9″ x 13″ baking dish. Layer half of the spinach over the meat sauce and then half of the white sauce. Repeat the layers.
  6. Bake for 40 minutes.

Ingredients

  • 1 tablespoon coconut oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 package uncured turkey bacon or regular bacon, chopped
  • 8 eggs
  • 1/2 cup coconut milk
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400°. Grease a 9″ square pan or 8″ x 11″ casserole dish.
  2. Heat coconut oil over medium heat. Add onion, green pepper, and bacon to skillet. Saute for about 10 minutes. Transfer ingredients into prepared baking dish.
  3. In a medium size bowl, beat the eggs, coconut milk, salt, and pepper.
  4. Transfer bacon & vegetables into prepared baking dish. Pour egg mixture over the top.
  5. Bake for 25-30 minutes. Check for doneness.
  6. Center may be a little puffy at first, but will settle as it cools.

This recipe for chicken patties is one that I have used for years, but I’ve updated it to be grain-free, dairy-free, and on plan with Trim Healthy Mama. They are sure to be a hit with your family. Enjoy them with spicy mayo, ranch dip, marinara sauce, or in a sandwich, there are so many different ways to serve these patties.

You can double or triple this recipe and freeze the extras. They don’t take long to thaw, just heat them up in the oven or a skillet on the stove top for a super quick meal.

Here is a funny little story of my history with chicken patties. When I was first married I was a very bad cook. I would buy frozen chicken patties and fry them for my husband. The funny part is that I burned them every. single. time. And then I would serve them with the darkest side down, hoping he wouldn’t notice. Ha. He must have really loved me. Here’s a little lesson in frying anything – pay attention!

A food processor makes mincing the cooked chicken a breeze, but if you don’t have one you can shred and then mince your chicken using a cutting board and a chef’s knife.

You can change up the flavor of the patties by adding in some cajun spice, a little more chili powder, or your family’s favorite seasonings.

Ingredients

  • 4 cups cooked chicken, chopped
  • 4 eggs
  • 1/2 cup golden flaxmeal
  • 1/3 finely chopped onion
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 2-3 tablespoons coconut oil

Instructions

  1. Shred and mince cooked chicken or process in a food processor until minced.
  2. Put all ingredients, except coconut oil in a large bowl. Mix well.
  3. Heat coconut oil in skillet over medium heat.
  4. Using about 1/4 cup of the mixture shape into a patties.
  5. Fry patties until browned on bottom, turn over to brown other side.
  6. Continue frying the rest of the patties, adding a little more coconut oil to skillet as needed.

Notes

Add any additional spices to suit your taste. Can be frozen.

Spicy Bacon Chicken Bake

I served this yummy casserole on lightly salted baked spaghetti squash. If you’ve never made spaghetti squash, don’t wait any longer. You need to do it. It’s such a fun veggie.

My favorite way to bake spaghetti squash is to pierce it 4-5 times and bake it whole in a 350° oven for 1 to 1 ½ hours. Then let it cool for at least ½ hour. After it is cool to touch, slice it in half and remove the seeds. Then take a fork and remove the spaghetti strings. It takes a little while to bake and cool, but it’s so easy to make. You can also freeze the cooked spaghetti squash to have it ready to go for when you don’t have the extra time to bake.

I added sheep cheese to this recipe, but if you need to keep it completely dairy free, feel free to leave it out. You can add an additional tablespoon of nutritional yeast to boost the cheesy flavor.

Ingredients

  • 3 cups shredded, cooked chicken
  • 5 slices turkey bacon, cooked and chopped
  • 1/3 cup chopped jalapenos
  • 1 lb bag frozen cauliflower
  • 1/2 cup chopped green pepper
  • 1 cup coconut milk
  • 1 cup shredded pecorino romano or other sheep cheese, optional
  • 2 tablespoons nutritional yeast
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Mix chicken, bacon, and jalapenos together in a large bowl.
  2. Cook cauliflower and green pepper together in covered stock pan with 2 inches of water on medium for about 10 minutes.
  3. In a medium bowl mix coconut milk, pecorino romano (optional), nutritional yeast, chili powder, sea salt, pepper, garlic and onion powder together
  4. When the cauliflower and green pepper is fork tender, lightly chop it with a fork or knife to bite size pieces.
  5. Add cauliflower, green peppers, and coconut milk sauce to the chicken mixture.
  6. Transfer to a greased 9 x 13 casserole dish and bake, uncovered, at 350° for 30 minutes.
  7. Serve over baked spaghetti squash.

Chicken Noodle Soup – Gluten-Free

This is our family’s favorite Chicken Noodle Soup – Gluten-Free recipe and it works wonderfully with the Trim Healthy Mama plan.

This soup is one of the first soups that I made as a young bride years ago. I remember being so excited to try it. I had found the recipe on the back of a can of broth and thought it sounded so good. Not being a very experienced cook the thought of even trying to make soup was a big step for me. Thankfully, it turned out yummy and was pretty easy to make.

When we made the switch to eating gluten-free, I used rice noodles instead of the wheat egg noodles that I originally used in this recipe. Now that we follow the Trim Healthy Mama plan and needing to keep it gluten-free, I use cabbage for our “noodles”. Our family loves it and we don’t miss those old style of noodles one bit.

I like to make a big pot of this soup so that it will last for several meals. I use my Cuisinart food processor that is similar to this model and it makes quick work of all the slicing, shredding, and dicing. I’ve had other food processors before this one that usually cost $40 or less, but they all would quit working after a year or two, so while it is more expensive it is very reliable and hard working.

Chicken Noodle Soup - Gluten-Free - MamaShire

You can use canned broth and chicken for this recipe if you’d like, or you make your own broth and cooked chicken with the recipe that I put in the notes below.

I include a couple of seasonings in this recipe that you may or may not have on hand or even be familiar with – nutritional yeast and Herbamare. They are both optional to the recipe, but I do think they add delicious flavoring to the soup.

Nutritional yeast is a deactivated yeast that comes in the form of yellow flakes, is high in B vitamins, and has a delicious cheesy taste. I love adding it to savory soups, non-dairy “cheese” crackers, casseroles, veggies, and popcorn. You can learn more about nutritional yeast and its benefits on Dr. Josh Axe’s website.

Herbamare is an organic herb seasoning salt. We especially like the flavor of this seasoned salt and love that its organic and gluten-free. We use it in soups, crackers, and veggie dishes.

Chicken Noodle Soup – Gluten-Free

Ingredients

  • 8 cups chicken broth, if buying make sure it’s gluten-free
  • 4-6 cups of water
  • 6 cups chicken, cooked and shredded
  • 1 lb carrots, sliced
  • 6-8 celery stalks, sliced
  • 1/2 head of cabbage, finely shredded, about 5-6 cups
  • 1 large onion, diced
  • 1 lb bag of frozen cauliflower, mostly thawed, optional to add
  • 2-4 tablespoons nutritional yeast, optional
  • 1-2 teaspoons of Herbamare, or other seasoned salt
  • salt and pepper to taste

Instructions

  1. Start by taking the frozen bag of cauliflower out of the freezer and setting it out to begin thawing.
  2. Put the broth and water in a large stockpot and bring to boil.
  3. While your broth and water are heating up, slice your carrots and celery. Add to the broth.
  4. Shred your cabbage and dice your onion. Add both to the pot.
  5. Chop up your cauliflower into small pieces about the size of rice and add to the soup.
  6. Add seasonings.
  7. Bring soup to a boil. Turn down to simmer, cover the pot and let simmer for 20-30 minutes, until veggies are tender.
  8. Add shredded chicken to pot and let simmer for another 15-20 minutes.

Notes

To make your own chicken broth, place a whole chicken (giblets removed) in a large crockpot with one onion quartered and 1/4 cup apple cider vinegar. Add water to cover chicken. Cook on high for 4-6 hours or until the meat is falling off the bones. Remove chicken to cool. This will all be hot so use caution. Drain the broth through a mesh strainer. Use this broth for your soup. Take the meat off the bones and shred to add to your soup. You may not need all of the chicken for your soup, so you can save some chicken back for another use. You can make more broth by taking the bones of the chicken and putting them back into the crockpot. Add water to an inch or more below the top of the crockpot. Add a quartered onion and 1/4 cup apple cider vinegar to the crockpot. You can cook this on low for 12-48 hours to get some wonderfully rich broth.

Sweet Mustard Bacon Chicken Strips - MamaShire - THM

This sweet-mustard-bacon-chicken combo makes for a fun meal or appetizer. Whenever I serve these strips there seems to be an extra level of excitement around the table. With bacon covered in a sweet and spicy sauce, you just can’t go wrong.

Tips for Trim Healthy Mamas:

  • I use xylitol or my homemade sweetener blend to make the sweet mustard, but feel free to use your choice of on plan sweetener.
  • The turkey bacon I used had only 5 grams of fat in two slices, so 4 of these chicken strips would be an FP and anything more than that would be an S.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 package turkey bacon, or regular bacon, either way make sure to keep it gluten-free
  • 1/3 cup xylitol or homemade sweetener*
  • 3/4 cup gluten-free mustard
  • 3 tablespoon apple cider vinegar
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat oven to 400°. Place a wire rack in a large baking pan or line the pan with foil.
  2. Mix the xylitol, mustard, apple cider vinegar, cayenne, and sea salt in a small mixing bowl. Set aside for later.
  3. Slice the chicken into 1 inch thick slices. Slice bacon strips in half to make long thin strips. Wrap bacon strips around chicken slices and place on wire rack in baking pan or foil lined pan.
  4. Baste the chicken strips with half of the sweet mustard mixture.
  5. Bake for 15 minutes. Turn chicken strips over and baste with the rest of the sweet mixture. Bake 10-15 minutes more until crispy.
  6. Serve immediately.

Notes

*homemade sweetener – 1 cup erythritol + 1 teaspoon Now Brand Stevia
